It is better to have smaller rollups.<\/li>\n<li>Zucchini is the same way &#8211; bigger is not necessarily better<\/li>\n<li>Jarred capers are fine. I prefer the little ones, although the big ones work too.<\/li>\n<li>Buy block cheese and grate it yourself as needed. It will keep longer.<\/li>\n<li>Use a grill pan for nice markings on the outside of your rollups<\/li>\n<\/ul>\n<p><span style=\"font-size: large; color: #ff0000;\">Ingredients to feed 4 people<\/span><\/p>\n<table>\n<tbody>\n<tr>\n<td>\n<ul>\n<li>2 eggplants or zucchini<\/li>\n<li>gorgonzola or mozzarella<\/li>\n<li>parmesan cheese<\/li>\n<li>provolone cheese<\/li>\n<li>cheddar cheese<\/li>\n<li>capers<\/li>\n<li>lemon<\/li>\n<\/ul>\n<\/td>\n<td>\n<ul>\n<li>1 C flour<\/li>\n<li>1 tsp salt<\/li>\n<li>1\/4 tsp pepper<\/li>\n<li>3 eggs<\/li>\n<\/ul>\n<p>1\/2 LB ground pork (cooked)<br \/>\nor thinly sliced smoked salmon<br \/>\nor thinly sliced Proscuitto<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><span style=\"font-size: large; color: #ff0000;\">Step by Step<\/span><\/p>\n<ol>\n<li>Slice eggplant or zucchini into long planks as thin as possible<\/li>\n<li>Whisk eggs<\/li>\n<li>Prepare flour with salt and pepper<\/li>\n<li>Flour planks<\/li>\n<li>Dip in egg wash &#8211; hold up to mostly drain<\/li>\n<li>Put into hot oiled grill pan until browned &#8211; doesn&#8217;t take long &#8211; about 4 minutes per side<\/li>\n<li>Place onto baking sheet to drain after cooking<\/li>\n<li>Salt them as they come out, while they are still sizzling<br \/>\n&#8211; Just like this, you can also use them for great sandwiches<\/li>\n<li>Smear a thin cream cheese strip across the plant<\/li>\n<li>Put capers across the cheese, roll them up.<br \/>\nPut in an optional protein<\/li>\n<li>You can add longer pieces of carrot, basil, cilantro, etc to make it especially pretty.<\/li>\n<li>Place them in an appetizer serving dish<\/li>\n<li>Poke with toothpicks if you wish<\/li>\n<li>Top with finely grated cheddar<\/li>\n<li>Plate with slices of lemon<\/li>\n<\/ol>\n<p>If you want to take this to the next level, and serve as a family dinner, put into a greased baking dish rather than an appetizer serving dish. Then, jumping from Step 10 above to Step 11 below&#8230;<\/p>\n<ol>\n<li value=\"11\">Mix 1\/2 C gorgonzola or mozzerella with<br \/>\n&#8211; 1\/4 C Shredded cheddar<br \/>\n&#8211; 2 TBL Parmesan cheese<\/li>\n<li>Sprinkle cheese over top of rollup layer<\/li>\n<li>Spread cooked ground browned pork on the next layer<\/li>\n<li>Spread with a little red sauce<\/li>\n<li>Top with provalone<\/li>\n<li>Bake at 450\u00ba for 10 minutes<\/li>\n<\/ol>\n\n","protected":false},"excerpt":{"rendered":"<p>Before we begin&#8230; When you buy your eggplant, don&#8217;t get one that is too big &#8211; it will be tough.
