{"id":3579,"date":"2013-09-02T13:50:39","date_gmt":"2013-09-02T13:50:39","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3579"},"modified":"2023-08-01T15:16:04","modified_gmt":"2023-08-01T22:16:04","slug":"popovers","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/popovers\/","title":{"rendered":"Dinner Popover &#8211; with or without Cheese Filling"},"content":{"rendered":"<ul>\n<li>1 C warm milk<\/li>\n<li>1 C AP flour<\/li>\n<li>1\/2 C grated cheese &#8211; Fontina, Mozzarella, etc<\/li>\n<li>4 TBL melted butter<\/li>\n<li>1\/2 tsp coarse salt<\/li>\n<li>4 large eggs<\/li>\n<\/ul>\n<p>Optional for stuffing:&nbsp; Hot chopped spinach with cheese<\/p>\n<ol>\n<li>Preheat oven AND cast iron pan to 425 degrees<\/li>\n<li>Brush standard muffin cups with Crisco<\/li>\n<li>Using a whisk, combine all of the upper ingredients, except the flour<\/li>\n<li>When ingredients are blended, add the flour and fold gently just until blended &#8211; DO NOT OVERMIX<\/li>\n<li>Fill muffin cups only halfway<\/li>\n<li>Place muffin pan in hot oven and cook for 12 minutes<\/li>\n<li>Reduce heat to 375\u00ba<\/li>\n<li>Rotate pan, and cook for 10 more minutes<\/li>\n<li>Pierce each muffin top with a skewer to let steam escape and let cook another 5 minutes<\/li>\n<li>Remove and serve immediately<\/li>\n<\/ol>\n<p>You can serve just like this, or fill with spinach\/cheese.&nbsp;<br \/>\nIf you want them filled, continue with step 12.<\/p>\n<ol>\n<li value=\"12\">Crisp up two strips of bacon in a skillet<\/li>\n<li>Thaw and squeeze dry 1\/2 C frozen spinach<\/li>\n<li>Saute in butter, then mix in 1\/2 TBL AP flour<\/li>\n<li>Add 1\/2 C whole milk<\/li>\n<li>Add 1\/2 tsp fresh nutmeg<\/li>\n<li>Season to taste with salt and pepper<\/li>\n<li>Cut top of&nbsp; popover and stuff with spinach mixture<\/li>\n<li>Great when served with eggs<\/li>\n<\/ol>\n<hr>\n<p><strong>BASIC POPOVER<\/strong><\/p>\n<ul>\n<li>3 Large eggs<\/li>\n<li>1 cup whole milk<\/li>\n<li>1 cup AP flour<\/li>\n<li>three TBL butter .
