{"id":3499,"date":"2013-07-04T00:11:39","date_gmt":"2013-07-04T00:11:39","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3499"},"modified":"2019-07-06T17:16:18","modified_gmt":"2019-07-07T00:16:18","slug":"chicken-nuggets","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/chicken-nuggets\/","title":{"rendered":"Chicken nuggets"},"content":{"rendered":"<h2>Brine chicken pieces two hours<\/h2>\n<p>Mix together brine liquid and put into a zip lock bag<\/p>\n<ul>\n<li>1 C warm water<\/li>\n<li>1 C warm buttermilk<\/li>\n<li>1 TBL sugar<\/li>\n<li>1 TBL salt<\/li>\n<li>2 TBL Worcestershire<\/li>\n<\/ul>\n<p>Cut boneless chicken breasts into equal parts about 1\/2 inch across, place in the brine bag and put into and bowl and place in the refrigerator.\u00a0 Agitate every 30 minutes, or so.<\/p>\n<h2>Coat the Chicken Pieces<\/h2>\n<ul>\n<li>Combine\n<ul>\n<li>1\/2 C AP flour<\/li>\n<li>1 TBL Grandpa&#8217;s Thunder Powder<\/li>\n<li>1 tsp salt<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<\/ul>\n<\/li>\n<li>Put coating mixture into a bag<\/li>\n<li>Drain and toss still wet chicken pieces in the coating<\/li>\n<li>Set aside on a pan for the coating to firmly adhere<\/li>\n<li>Meanwhile, separate the yolk from the egg white.\u00a0 Keep the yolk for another recipe &#8211; we will be using only the white &#8211; beat the whites, then set aside<\/li>\n<li>Combine 1 C Panko with 1 TBL Thunder Powder<\/li>\n<li>Dip the chicken pieces into the egg with your left hand<\/li>\n<li>Let drain for a few seconds, then drop into the Panko bread crumbs<\/li>\n<li>Take the piece out with your right hand, and place on a clean plate<\/li>\n<li>Repeat with all of the pieces.\u00a0 Let rest for 5-10 minutes<\/li>\n<\/ul>\n<h2>Fry the Nuggets<\/h2>\n<ul>\n<li>While the pieces rest, preheat 4 cups vegetable oil to 350\u00b0F .
