Good for breakfast, brunch or snacks"},"content":{"rendered":"<p>4 crepes (<a href=\"https:\/\/www.grandpacooks.com\/recipes\/wholly-crepes\/\">see recipe<\/a> &#8211; link below) leftovers work great<\/p>\n<h2><strong>STRAWBERRY FILLING<\/strong><\/h2>\n<ul>\n<li>1\/2 C plus 1\/2 C fresh strawberries or other fruit<\/li>\n<li>1 TBL sour cream<\/li>\n<li>2 TBL powdered sugar<\/li>\n<\/ul>\n<ol>\n<li>Coarsely mix and mash above<\/li>\n<li>Add in other 1\/2 C strawberries<\/li>\n<li>Let rest 30 minutes<\/li>\n<\/ol>\n<h2><strong>BLUEBERRY FILLING<\/strong><\/h2>\n<ul>\n<li>1\/2 C blueberries, plus 1\/2 C blueberries<\/li>\n<li>Zest and juice from one lemon<\/li>\n<li>2 TBL honey<\/li>\n<li>1\/4 C sugar<\/li>\n<li>pinch of cardamom<\/li>\n<\/ul>\n<ol>\n<li>Coarsely mix and mash above<\/li>\n<li>Add in other 1\/2 C blueberries<\/li>\n<li>Let rest 30 minutes<\/li>\n<\/ol>\n<h2><strong>CHEESE FILLING<\/strong><\/h2>\n<ul>\n<li>1\/2 CU cottage cheese<\/li>\n<li>1\/2 CU softened cream cheese (softened)<\/li>\n<li>1\/4 tsp vanilla<\/li>\n<li>1 TBL sugar<\/li>\n<li>1 TBL butter (softened)<\/li>\n<li>1 tsp cinnamon<\/li>\n<\/ul>\n<h2><strong>RICOTTA FILLING<\/strong><\/h2>\n<ul>\n<li>1 egg<\/li>\n<li>3 TBL honey<\/li>\n<li>Lemon and zest from one lemon<\/li>\n<li>1 block softened cream cheese<\/li>\n<li>Salt, cardamom, cinnamon, nutmeg, almond extract<br \/>\n(mix above)<\/li>\n<li>Fold in 1 C ricotta and cool at least 30 minutes<\/li>\n<\/ul>\n<p><span style=\"font-size: 36pt;\"><strong>STEP BY STEP<\/strong><\/span><\/p>\n<ol>\n<li>Prepare FILLING<\/li>\n<li>Lay CREPE flat (slightly warm)<\/li>\n<li>Put 1\/3 C filling a little off-center and fold over one third, then fold the ends in, then fold over the other third placing the folded end on the bottom<\/li>\n<li>Put into the fridge for about 60 minutes to cool internally, then move to the cooking phase.\n<ul>\n<li>OVEN:&nbsp; Bake on lightly greased parchment paper on high (450 F) until well-browned or for up to 10-12 minutes<\/li>\n<li>MICROWAVE:&nbsp; Heat in microwave 2 minutes during cook-time<\/li>\n<li>SKILLET:&nbsp; Brown in 1 TBL butter and 1 TBL canola oil 2 minutes per side<\/li>\n<\/ul>\n<\/li>\n<li>Top with fresh hot fruit and sour cream (or below topping)<\/li>\n<li>Sprinkle with powdered sugar or Turbinado sugar<\/li>\n<\/ol>\n<h1>Crepes<\/h1>\n<h2><strong>Simple Crepe Batter Recipe<\/strong><\/h2>\n<ul>\n<li>1 C milk<\/li>\n<li>2 eggs<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 1\/4 C AP sifted cake flour or other fine flour<\/li>\n<li>2 TBL powdered sugar<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<li>zest and juice from one lemon<\/li>\n<\/ul>\n<ol>\n<li>Mix ingredients above and let rest in refrigerator for 60 minutes (or overnight)<\/li>\n<li>Put 1\/4 C of batter into hot non-stick skillet for 2 minutes<\/li>\n<li>If you make them REALLY thin, you don&#8217;t even have to cook the other side.<br \/>\nIt will fully cook when they are finished in the oven.<\/p>\n<ul>\n<li>(when filling, fill with the uncooked side up)<\/li>\n<\/ul>\n<\/li>\n<li>Stack them between sheets of parchment or waxed paper<\/li>\n<\/ol>\n<h2><strong>Professional Crepe Recipes<\/strong><\/h2>\n<blockquote class=\"wp-embedded-content\" data-secret=\"RVy6dEajuv\"><p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wholly-crepes\/\">Wholly Crepes<\/a><\/p><\/blockquote>\n<p><iframe class=\"wp-embedded-content\" sandbox=\"allow-scripts\" security=\"restricted\" style=\"position: absolute;
