{"id":3199,"date":"2013-11-27T16:18:07","date_gmt":"2013-11-27T16:18:07","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3199"},"modified":"2020-04-10T11:58:46","modified_gmt":"2020-04-10T18:58:46","slug":"cheddar-souffle","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/cheddar-souffle\/","title":{"rendered":"Cheddar Souffle"},"content":{"rendered":"<p>1 tablespoon dry breadcrumbs<br \/>\n3 tablespoons unsalted butter<br \/>\n3 tablespoons all-purpose flour<br \/>\n1 cup whole milk<br \/>\n1 teaspoon kosher salt<br \/>\n1\/2 teaspoon freshly ground white pepper<br \/>\n1\/4 teaspoon freshly ground nutmeg<br \/>\n3 large eggs yolks, at room temperature<br \/>\n1 1\/4 cups smoked cheddar cheese, grated and packed (about 4 ounces)<br \/>\n4 large egg whites, at room temperature<br \/>\n2 tablespoons minced chives<\/p>\n<p>Instructions<br \/>\n1. Heat the oven to 375\u00b0F and arrange a rack in the bottom third.<br \/>\n2. Generously coat a 6-cup souffl\u00e9 dish with butter and sprinkle it lightly with breadcrumbs to coat evenly; set aside.<br \/>\n3. Melt butter in a small saucepan over low heat.<br \/>\n4. When it foams, add flour and stir occasionally until flour has cooked slightly, about 4 minutes.<br \/>\n5. Gradually whisk in milk and bring to a boil, stirring frequently.<br \/>\n6. Remove from heat and whisk in salt, pepper, and nutmeg.<br \/>\n7. Whisk egg yolks in a large bowl until smooth.<br \/>\n8. Whisk about 1\/3 cup of the milk mixture into yolks until smooth.<br \/>\n9. Add remaining milk mixture, whisking until blended.<br \/>\n10. Stir in cheese and set aside.<br \/>\n11. Place a baking sheet in the oven to heat while finishing the souffl\u00e9, at least 5 minutes.<br \/>\n12. Place egg whites in the bowl of an electric mixer fitted with the whisk attachment and beat on medium speed until soft peaks form, about 5 minutes.<br \/>\n13. Increase the speed to high and beat until peaks are stiff and smooth but not dry, about 2 minutes more.<br \/>\n14. Gently fold 1\/3 of the egg whites into the cheese mixture until blended and no white streaks are visible.<br \/>\n15. Add remaining whites and chives and gently fold until thoroughly combined.<br \/>\n16. Pour into the prepared souffl\u00e9 dish.<br \/>\n17. Place souffl\u00e9 on the heated baking sheet.<br \/>\n18. Bake until it is well risen, the top is browned, the edges appear dry, and the center is set (it doesn\u2019t move if lightly touched), about 35 to 40 minutes.<br \/>\n19.
