{"id":3185,"date":"2013-05-31T02:50:35","date_gmt":"2013-05-31T02:50:35","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3185"},"modified":"2019-05-17T07:24:56","modified_gmt":"2019-05-17T14:24:56","slug":"caponata","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/caponata\/","title":{"rendered":"Caponata"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/05\/image.jpg\"><img decoding=\"async\" class=\"size-medium aiif3569 alignright\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/05\/image.jpg\" alt=\"image\" width=\"300\" height=\"225\" \/><\/a>INGREDIENTS<\/p>\n<ul>\n<li>1 eggplant<\/li>\n<li>1 zucchini<\/li>\n<li>2 C cubed winter squash<\/li>\n<li>1 Vidalia onion<\/li>\n<li>4 cloves garlic<\/li>\n<li>1 stalk celery<\/li>\n<li>1\/2 CU green olive<\/li>\n<li>1\/2 CU black olive<\/li>\n<li>1\/2 C golden raisins<\/li>\n<li>1 can diced tomatoes (drained)<\/li>\n<li>2 TBL capers<\/li>\n<li>1\/4 C apple cider vinegar<\/li>\n<li>1\/4 C white balsamic vinegar<\/li>\n<li>1\/2 tsp salt<\/li>\n<\/ul>\n<p>STEP BY STEP<\/p>\n<ol>\n<li>Toss your cubed squash in 1 TBL EVOO and 1 tsp salt<\/li>\n<li>Bake at 350\u00ba for 30 minutes<br \/>\nWhile this cooks<\/li>\n<li>Cut up onion and mince the garlic &#8211; Set aside<\/li>\n<li>Peel the eggplant, leaving just a little bit of purple to make it pretty.<\/li>\n<li>Cut up the eggplant in 1\/2 inch cubes &#8211; Set aside<\/li>\n<li>Put drained tomato into a third bowl<\/li>\n<li>Cut celery into thin crescents &#8211; Add to tomato<\/li>\n<li>Quarter olives &#8211; Add to tomato<\/li>\n<li>Add capers, raisins and salt to tomato<\/li>\n<li>Heat up a skillet, add EVOO and saute onions<\/li>\n<li>When the start to soften, add the garlic and celery<\/li>\n<li>As soon as this is all combined, add the eggplant and combine gently<\/li>\n<li>Add tomato mixture to the eggplant<\/li>\n<li>Mix very gently, and continue heating 5 minutes.<\/li>\n<li>Mix gently, and continue to heat another 5 minutes<\/li>\n<li>Add vinegars, stir to combine and heat for another few minutes.<\/li>\n<li>Stir in cooked squash<\/li>\n<li>Can be served hot, but it is great chilled for at least several hours, and served cold.<\/li>\n<\/ol>\n<p>VARIATIONS<\/p>\n<p>Add any of the following ingredients for twists:<\/p>\n<ul>\n<li>Julienne strips from 1\/2 carrot<\/li>\n<li>Chopped fresh parsley, cilantro or basil<\/li>\n<li>Fresh quartered cherry tomatoes<\/li>\n<li>Pitted calamata olives<\/li>\n<li>Pimiento stuffed olives<\/li>\n<li>Add 1\/2 tsp red pepper chili flakes to kick it up a notch<\/li>\n<li>Substitute Red Wine vinegar for Apple Cider<\/li>\n<li>Add tomato sauce to create more of a cold summer soup<\/li>\n<\/ul>\n<p>NOTES<\/p>\n<ul>\n<li>You can serve this hot when you make it, and refrigerate the left-overs. They will keep well in the refrigerator for days, and you can haul it out at any time and just eat it without any to-do.<\/li>\n<li>Vinegar is the secret ingredient.
