{"id":3145,"date":"2013-05-31T00:57:39","date_gmt":"2013-05-31T00:57:39","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3145"},"modified":"2021-01-25T17:52:53","modified_gmt":"2021-01-26T00:52:53","slug":"chicken-and-dumplings","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/chicken-and-dumplings\/","title":{"rendered":"Chicken and Dumplings"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/05\/chick-dump.jpg\" rel=\"attachment wp-att-9253\"><img decoding=\"async\" class=\"alignright size-medium aiif9253\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/05\/chick-dump.jpg\" alt=\"chick-dump\" width=\"300\" height=\"189\" \/><\/a><span style=\"font-size: large; color: #ff0000;\">Before we begin&#8230;<\/span><\/p>\n<ul>\n<li>This recipe is pretty easy, and you can make it even easier by buying a pre-cooked chicken.<\/li>\n<li>This particular recipe is shown a bit differently than the rest of our recipes.<\/li>\n<li>You can even cut corners more by using Pillsbury crack and cook dinner rolls for your dumplings.<\/li>\n<li>Read on&#8230;<\/li>\n<\/ul>\n<p><span style=\"font-size: large; color: #ff0000;\">Cooking the Chicken<\/span><\/p>\n<table>\n<tbody>\n<tr>\n<td>\n<ul>\n<li>6 chicken thighs<\/li>\n<li>1\/2 onion<\/li>\n<li>1 stalk celery<\/li>\n<li>3 cloves garlic<\/li>\n<li>1\/2 tsp ginger<\/li>\n<li>6 mushrooms<\/li>\n<li>1\/2 tsp sage<\/li>\n<li>1\/2 tsp thyme<\/li>\n<li>2 tomatoes or one can &#8211; diced<\/li>\n<li>4 C chicken stock<\/li>\n<li>2 bay leaves<\/li>\n<li>1 small can baby peas<\/li>\n<li>1 tsp lemon juice<\/li>\n<li>2 TBL butter<\/li>\n<\/ul>\n<hr \/>\n<p>Or buy a pre-cooked chicken and shred it<\/td>\n<td>Brine thighs in salty\/sweet water 4 hours<br \/>\nSeason meat with salt and pepper<br \/>\nBrown pieces in cast-iron skillet<br \/>\nAdd 1 stalk celery &#8211; chopped<br \/>\nAdd 3 cloves garlic and 1\/2 tsp ginger<br \/>\nAdd 1\/2 tsp sage and 1\/2 tsp thyme<br \/>\nAdd 4 C chicken stock to deglaze<br \/>\nAdd 2 bay leaves<br \/>\nSimmer for 1 hour<br \/>\nRemove chicken and set aside to cool<br \/>\nAdd 2 tomatoes (or one can) &#8211; diced<br \/>\nAdd 6 mushrooms &#8211; quartered<br \/>\nAdd 1\/2 onion &#8211; slices<br \/>\nMeanwhile, shred the chicken and set aside<br \/>\nSimmer for 1 more hour<br \/>\nAdd 1\/2 C peas and 1 tsp lemon juice<br \/>\nAdd chicken back in, add butter and simmer<br \/>\nAt this point, you are ready to add dumplings, then cook 20 more minutes.\u00a0 Do not over-stir<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><span style=\"font-size: large; color: #ff0000;\">Cooking the dumplings<\/span><\/p>\n<table>\n<tbody>\n<tr>\n<td>Prepare the dumplings<br \/>\nwhile the pot is<br \/>\non the stove<br \/>\nwith the chicken,<br \/>\nso they will be ready<br \/>\nto add when it is time.<\/p>\n<hr \/>\n<ul>\n<li>1 CU all purpose flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/2 CU whole milk<\/li>\n<li>2 tablespoons chopped fresh chives<\/li>\n<\/ul>\n<hr \/>\n<p>or buy Pillsbury crack and bake dinner rolls<\/td>\n<td>\n<ol>\n<li>Sift together the flour, baking powder, and salt.<br \/>\n&#8211; Repeat 3 times (this makes the dumplings very light).<\/li>\n<li>Mix all ingredients together quickly<br \/>\n&#8211; Do not overmix of they will become tough<\/li>\n<li>Set aside for 10 minutes<\/li>\n<li>Roll dumplings flat and cut into noodles, into 1\/2 inch balls and roll round, or wrap around pieces of cheese for <strong>&#8220;bags of gold&#8221;<\/strong><\/li>\n<li>Chicken stock should be barely simmering, or dumplings will fall apart<\/li>\n<li>Cover and cook (maintaining a simmer) for 10 &#8211; 12 minutes<\/li>\n<\/ol>\n<p>Alternate Dumpling Mixture<\/p>\n<p>1 C Ricotta cheese<br \/>\n2 egg yolks<br \/>\nsalt<br \/>\nJust enough flour to allow you to form small balls<br \/>\nCook about 3 minutes each &#8211; or until they rise<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><span style=\"font-size: large; color: #ff0000;\">Oh, one more thing&#8230;<\/span><\/p>\n<ul>\n<li>\n<div class=\"_oDd\" data-hveid=\"34\"><span class=\"_Tgc\">Some areas of the US will call this Chicken and Sliders<br \/>\n<\/span><\/div>\n<\/li>\n<li>In China this is called Chicken Won Ton<\/li>\n<li>In Jewish culture, these are called matzah balls<\/li>\n<li>Some chicken and dumplings are made with flat noodles, rather than balls.\u00a0 This is called Chicken and Slicks<\/li>\n<li>A kreplach is a dumpling filled with cooked meat<\/li>\n<li>Grandma made bags of gold when she was a little girl, which is a small cube of cheese wrapped in dough<\/li>\n<\/ul>\n\n","protected":false},"excerpt":{"rendered":"<p>Before we begin&#8230; This recipe is pretty easy, and you can make it even easier by buying a pre-cooked chicken.
