Brown ale<\/li>\n<li>onion<\/li>\n<li>brown sugar<\/li>\n<li>bay leaf<\/li>\n<li>thyme<\/li>\n<li>vinegar<\/li>\n<li>salt &amp; pepper<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ul>\n<li>Brine for moisture in 2 qt water, 1 C salt, refrigerate for 60 minutes.<\/li>\n<li>Rinse off then dry. Browns better , otherwise steams.<\/li>\n<li>Season with GTP or salt, pepper and paprika<\/li>\n<li>Cook skin down in 1 TBL EVOO about 5 minutes<\/li>\n<li>Flip and cook 3 minutes.<\/li>\n<li>Put on baking sheet and cook at 400\u00ba for internal temp of 160\u00ba (about 12-15 minutes)<\/li>\n<\/ul>\n<p><strong>Special Steps:<\/strong><\/p>\n<ul>\n<li>Sauce, Cook in same pan of residual fat, onion, 1 C chicken stock, 8oz.
