{"id":3021,"date":"2013-05-28T03:39:52","date_gmt":"2013-05-28T03:39:52","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=3021"},"modified":"2019-08-22T14:38:51","modified_gmt":"2019-08-22T21:38:51","slug":"pork-tenderloin","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/pork-tenderloin\/","title":{"rendered":"Pork Tenderloin ~~ 5"},"content":{"rendered":"<ul>\n<li>Season\/coat with <a href=\"https:\/\/www.grandpacooks.com\/recipes\/roberts-thunder-powder\/\">Grandpa&#8217;s Thunder Powder<\/a> or <a href=\"https:\/\/www.grandpacooks.com\/recipes\/grandpas-dry-rub\/\">Grandpa&#8217;s Dry Rub<\/a> depending on how spicy you want your coating.<\/li>\n<li>All cases &#8211; Remove silverskin &#8211; tie up ends or loose pieces.<\/li>\n<li>Buy only those sealed in a CRYOBAG, which will allow it to live (refrigerated) for up to two weeks.<\/li>\n<li>DO NOT BUY Enhanced Pork &#8211; packed in a speckled solution with injected liquid.<\/li>\n<li>This is a very lean piece of meat.\u00a0 Cook it over high heat and very quickly.<\/li>\n<li>Frequently a dry rub right before cooking.<\/li>\n<li>Alternately, a marinade of lime juice and zest, honey, salt and garlic for 16 hours<\/li>\n<li><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2>&#8211;<br \/>\nBasic Tenderloin<\/h2>\n<p>Ingredients<\/p>\n<p>Pork tenderloin<br \/>\n1 T basil<br \/>\n2 T oil<br \/>\n2 T apple cider vinegar<br \/>\n2 T unsulfured molasses<br \/>\n1 T Dijon mustard<br \/>\n2 bay leaves<\/p>\n<p>Instructions<\/p>\n<p>1.\u00a0 Mix basil, oil, vinegar and marinate pork tenderloin for about 1 hour.<br \/>\n2.\u00a0 Sear in hot pan 90 seconds per side,\u00a0 and put aside.<br \/>\n3.\u00a0 Cook in oven 20 min @ 325 deg.<br \/>\n4.\u00a0 Alternately, continue to rotate 90 degrees (recooking some sides) for a total of 12 minutes.\u00a0 No need to finish in the oven.<\/p>\n<p>Wrap in foil, then let rest for 10 minutes<\/p>\n<p>Serve w\/ cornsalad<\/p>\n<h2>&#8211;<br \/>\nTenderloin with Mustard Sauce<\/h2>\n<p>Ingredients<\/p>\n<p>Pork tenderloin<br \/>\n1 tsp olive oil<br \/>\n\u00bc cu whole grain mustard<br \/>\n2 tbl Dijon mustard<br \/>\n2 tbl sour cream<br \/>\nred wine<\/p>\n<p>Instructions<\/p>\n<p>1. Skim off outside fat layer, season w\/ 1 tsp olive oil. Put into hot skillet, saut\u00e9 5-10 minutes (turn occasionally).<br \/>\n2. Cook 20-25 min on top of stove 150\u00b0 internal temp. Out to rest 10 minutes.<br \/>\n3. In same pan as fond, add \u00bc cu whole grain mustard, 2 tbl Dijon mustard.<br \/>\n4. Mix and heat 2 tbl sour cream, whisk and blend, thin with red wine. Cook to meld then drizzle ove tenderloin.<\/p>\n<h2>&#8211;<br \/>\nGreens Loin<\/h2>\n<p>Ingredients<\/p>\n<p>1 or 2 pork tenderloins<br \/>\nMisc green seasonings<br \/>\nMarinade of your choice<\/p>\n<p>Instructions<\/p>\n<p>1. Marinate pork loin at least 3 hours<br \/>\n2. Roll in seasonings<br \/>\n3. Bake in 375 degree oven for 30 minutes<br \/>\n4. Let rest for 10 minutes prior to slicing<\/p>\n<p>Optional Marinade:<br \/>\n1\/4 CU olive oil<br \/>\n1\/2 diced onion<br \/>\n1 tsp dried mustard<br \/>\n1 TBL oregano or basil<\/p>\n<h2>&#8211;<br \/>\nBasic Tenderloin<\/h2>\n<p>Ingredients<\/p>\n<p>2 tbl basil<br \/>\n2 tb; oil<br \/>\n2 tbl balsamic vinegar<\/p>\n<p>Instructions<\/p>\n<p>1. Trim pork tenderloin and marinate in (2 tbl basil, 2 tbl oil, 2 tbl balsamic vinegar).<br \/>\n2. Sear in hot pan 3-5 min. per side.<br \/>\n3. Cook in oven 20 min @ 325\u00b0<\/p>\n<h2>&#8211;<br \/>\nBasil Crusted Pork Tenderloin<\/h2>\n<p>Ingredients<\/p>\n<p>1 pork tenderloin (multiply ingredients for more tenderloins)<br \/>\n1 TBL basil (minced)<br \/>\n1 TBL olive oil<br \/>\n2 TBL balsamic vinegar<\/p>\n<p>Instructions<\/p>\n<p>1. Mix together basil, olive oil and vinegar in a plastic bag<br \/>\n2. Put tenderloin into bag, completely covering<br \/>\n3. Agitate about every 15 minutes<br \/>\n4. After 1-2 hours, sear in hot pan 3-5 minutes<br \/>\n5.
