{"id":2974,"date":"2013-05-28T02:56:12","date_gmt":"2013-05-28T02:56:12","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2974"},"modified":"2020-01-12T16:20:29","modified_gmt":"2020-01-12T23:20:29","slug":"cous-cous-three-recipes","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/cous-cous-three-recipes\/","title":{"rendered":"Grandpa&#8217;s Tabbouleh"},"content":{"rendered":"<h1>Cous Cous Salad<\/h1>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/4 CU uncooked couscous or Bulgar wheat<\/li>\n<li>2\/3 CU chicken stock or water if none is available<\/li>\n<li>1 tsp olive oil<\/li>\n<li>1 TBL milk or cream<\/li>\n<li>1 TBL red raisins or cranberries (minced)<\/li>\n<li>1 TBL golden raisins (minced)<\/li>\n<li>scant salt and pepper<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Soak Bulgar or Couscous for 30 minutes, then drain and squeeze.<\/li>\n<li>Chop raisins very finely<\/li>\n<li>Heat water, stock, oil, raisins and seasoning to boiling<\/li>\n<li>Add Bulgar or Couscous and mix.<\/li>\n<li>Add milk and mix well<\/li>\n<li>Turn off heat and let rest 15 minutes.<\/li>\n<li>Fluff with fork, breaking up any lumps, and serve<\/li>\n<\/ol>\n<p>Suggested options to mix in after step seven<\/p>\n<ul>\n<li>1 TBL diced cucumber<\/li>\n<li>juice and zest from one lemon<\/li>\n<li>1 TBL diced scallions or chives<\/li>\n<li>(optional) a bit of diced Roma tomato<\/li>\n<li>1 C minced parsley<\/li>\n<li>A bit of spearmint<\/li>\n<li>Slivered radish<\/li>\n<li>Slivered or chopped almonds<\/li>\n<li>Crushed peanuts<\/li>\n<li>Fond from pan fried pork chop . ALT rendered bacon<\/li>\n<\/ul>\n<p>Notes I discovered this at Lowery&#8217;s Steak House. It was so good, I ate the entire portion grain by grain. This is my attempt at re-creating it.<\/p>\n<p>Serving suggestions<br \/>\nGreat served with poached eggs over top<br \/>\nAlso pretty if served in a lettuce cup<\/p>\n<p>++++++++++<\/p>\n<p>Cous-cous Tabbouleh<\/p>\n<p>1 CU cooked plain cous-cous<br \/>\n1 lemon (zest AND juice)<br \/>\n1 TBL olive oil<br \/>\n1 TBL sesame oil<\/p>\n<p>ALL BELOW ITEMS CHOPPED<br \/>\n1 TBL parsley (fresh is better)<br \/>\n2 TBL mint<br \/>\n4 green onions<br \/>\n2 large tomatoes<br \/>\n1 green pepper<br \/>\n8 black olives<br \/>\nSalt and pepper to taste<\/p>\n<p>1. Cook couscous<br \/>\n2. Mix lemon juice, oil salt and pepper in large bowl<br \/>\n3. Combine with couscous and let marinate for two hours<br \/>\n4. Add parsley, mint, onions and pepper<br \/>\n5. Gently mix well<br \/>\n6.
