{"id":2875,"date":"2013-05-26T05:08:25","date_gmt":"2013-05-26T05:08:25","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2875"},"modified":"2020-04-15T11:45:40","modified_gmt":"2020-04-15T18:45:40","slug":"chicken-teriyaki","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/chicken-teriyaki\/","title":{"rendered":"Chicken Teriyaki"},"content":{"rendered":"<p>1\/4 C Short grain white rice &#8211; cooked in 1\/2 C water<br \/>\n2 Boneless chicken thighs<br \/>\nscant Kosher salt and pepper<br \/>\nsprinkle of Garlic<br \/>\nsprinkle of Ginger<br \/>\nEqual parts flour and cornstarch to coat &#8211; about 2 TBL each<\/p>\n<ol>\n<li>Cut raw chicken breasts on the bias into thin cutlets<\/li>\n<li>Sprinkle with salt, garlic, and ginger<\/li>\n<li>Dredge in cornstarch, shaking off any excess<\/li>\n<li>Pan fry over medium-high heat in peanut oil<br \/>\nDon&#8217;t overcook or it will dry out, but you want both sides well browned<\/li>\n<li>Put teriyaki sauce mix into pan with chicken<\/li>\n<li>Turn chicken over to coat<\/li>\n<li>Serve over rice and top w\/sauce.<\/li>\n<\/ol>\n<p><span style=\"font-size: 18pt;\"><strong>Teriyaki Sauce<\/strong><\/span><\/p>\n<ul>\n<li>\u00bd C sugar<\/li>\n<li>\u00bd C soy<\/li>\n<li>2 TBL mirin<\/li>\n<li>2 TBL saki<\/li>\n<li>1 tsp sesame oil<\/li>\n<li>1 clove garlic<\/li>\n<li>\u00bd tsp ginger<\/li>\n<li>\u00bd tsp cornstarch<\/li>\n<\/ul>\n<p><strong>Special Steps<\/strong>: Use short-grain white rice (stickier).
