{"id":2778,"date":"2013-05-26T04:04:16","date_gmt":"2013-05-26T04:04:16","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2778"},"modified":"2019-05-14T15:00:04","modified_gmt":"2019-05-14T22:00:04","slug":"taquitos","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/taquitos\/","title":{"rendered":"Taquitos and Flautas"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/05\/Taquitos.jpg\" rel=\"attachment wp-att-8934\"><img decoding=\"async\" class=\"alignright size-medium aiif8934\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/05\/Taquitos.jpg\" alt=\"Taquitos\" width=\"300\" height=\"225\" \/><\/a>The difference between taquitos and flautas are; the first is flour tortilla, and the second is made from corn tortillas.<\/p>\n<p>Ingredients:<br \/>\nBeef, chicken, chorizo or pork &#8211; Cooked<br \/>\nOR<br \/>\n1\/4 C Onion, 1 potato and 6 oz chorizo<\/p>\n<p>Olive oil<br \/>\nCarrots<br \/>\nCabbage<br \/>\nGarlic<br \/>\nBasil<br \/>\nCumin<br \/>\nCoriander or cilantro<br \/>\nParsley<br \/>\nLime<\/p>\n<ol>\n<li>Sear meat pieces and set aside<\/li>\n<li>To hot skillet, add carrots, cabbage, garlic, basil, cumin, coriander, parsley.<\/li>\n<li>Don\u2019t need to cook completely.<\/li>\n<li>Add 1 tbl lime juice and cilantro.<\/li>\n<li>Heat tortilla in a hot cast iron skillet for about 15 seconds per side<\/li>\n<li>Roll in tortillas (or empanada wrappers) and hold in place w\/ 2 toothpicks.<\/li>\n<li>Spray w\/ oil &amp; broil till golden brown or fry in shallow pan of hot oil until browned.<\/li>\n<li>You can also deep fry, and then let drain on rack over a paper towel<\/li>\n<li>Remove toothpicks<\/li>\n<li>Plate and serve with cooked veggies, guacamole, mango, cantaloupe and side salad.<\/li>\n<li>Top with chipotle &amp; sour cream or Mexican crema<\/li>\n<\/ol>\n<p>Oil or oven should be preheated to 350\u00ba<\/p>\n<hr \/>\n<p>From Cindy&#8217;s Recipe Cards:<\/p>\n<p>Title of Recipe: Taquitos<\/p>\n<p>Ingredients:<br \/>\nBeef, chicken or pork<br \/>\nMeat<br \/>\nOlive oil<br \/>\nCarrots<br \/>\nCabbage<br \/>\nGarlic<br \/>\nBasil<br \/>\ncumin<br \/>\ncoriander\/cilantro<br \/>\nparsley<br \/>\nlime<\/p>\n<p>Instruction:<br \/>\nSear meat pieces in hot olive oil tossed in corn starch. Add carrots, cabbage, garlic, basil, cumin, coriander, parsley. Don\u2019t need to cook completely. Add 1 tbl lime juice and cilantro. Roll into flour tortillas (sushi roll) hold in place w\/toothpick. Spray w\/oil &amp; broil till golden brown. Cut @ angle and plate.<\/p>\n<p>Special Steps:<br \/>\nTop with chipotle &amp; sour cream.
