Shrimp or Chicken Stock<br \/>\n1 lb andouille sausage (alt. Kielbasa) (slice 1\/l8\u201d thick)<br \/>\nveg oil<br \/>\nall purpose flour<br \/>\n2 med diced onions<br \/>\nscallions<br \/>\n1 celery rib (diced thinly)<br \/>\n6-8 okra<br \/>\n6 cloves garlic (minced)<br \/>\n1 tsp thyme<br \/>\n1 tbl cayenne<\/p>\n<p>Instructions<br \/>\n1. Peel shrimp and put shells in cook pot OR skin &amp; bone chicken and put in cook pot.<br \/>\n2. Cook in 4 \u00bd cu water, simmer 20-30 min, strain add 1 (8oz) bottle clam juice and 3 \u00bd cu ice water.<\/p>\n<p>Roux;<br \/>\n1. \u00bd cu veg oil, \u00bd cu flour, whisk to elimate lumps.<br \/>\n2. cook on medium heat until turns copper or mahogany (no smoke) about 20 min. stirring constantly.<br \/>\n3. When roux is brown, add to roux 2 med diced onions, 1 diced rib celery, 6-8 okra, 6 cloves minced garlic, thyme, cayenne.<br \/>\n4. Cook stirring frequently 10-15 min. Add stock 1 cup at a time. Bring to boil, skim foam off w\/ spoon, simmer 30 min.<br \/>\n5. \u00bd hour later add 1 lb Andouille sausage and simmer 30 min.<br \/>\n6. Add 1 \u00bd meat (don\u2019t over cook) add \u00bd cu parsley @ end and \u00bd cu scallions.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 1 lb.
