set aside to cool<\/li>\n<li>Toast poblano over an open flame, with a blow torch, or under the electric oven broiler until it is blackened<\/li>\n<li>Put the pepper into a plastic bag to sweat for 10 minutes<\/li>\n<li>Use a paper towel to remove the skin &#8211; DO NOT RINSE<\/li>\n<li>Cut off top of pepper, slit open and remove seeds and vein<\/li>\n<li>Cut bread into thin slices.<\/li>\n<li>Apply desired mayo or mustard to the cooking side.<\/li>\n<li>Apply chipotle mayo to the inside.<\/li>\n<li>Put optional ham or onion or tomato on the bread.<\/li>\n<li>Put cheese onto the bread and place the other slice on top.<\/li>\n<li>Melt 2 TBL butter in a medium heat (not hot) skillet.<\/li>\n<li>Put sandwich into the skillet, spreading around so that butter coats the bottom slice.<\/li>\n<li>Get another tab of butter ready.<\/li>\n<li>Slip a spatula under the sandwich and hold it while the other tab of butter melts, flip it and place it on the pool of&nbsp; butter.<\/li>\n<li>Spread it around on the butter.<\/li>\n<li>Put a lid, large mixing bowl or baking sheet over top to help the cheese melt.<\/li>\n<li>Cook about two more minutes<\/li>\n<li>Serve with sides of bread butter pickles, sweet gerkins, capers, etc.<\/li>\n<li>Cut the crust off, as sparingly as possible, then quarter the sandwiches and serve.<\/li>\n<\/ol>\n<p><strong><span style=\"font-size: 24pt;\">Alternatives<br \/>\n<\/span><\/strong><\/p>\n<h2>Chipotle Spread<\/h2>\n<ul>\n<li>1\/2 C miracle whip<\/li>\n<li>2 chipotle peppers<\/li>\n<li>zest and juice from one lime<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Recipe Ingredients Your favorite bread &#8211;
