Of course, it is served on a corn tortilla, and then spread with refried beans, but sometimes has a fried egg on top, sometimes ham, sometimes green chilis&#8230; and then topped with cheese. The concept is a corn tortilla with tasty goodness. Here are several recipes if you want some guidance your first time through.<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/02\/image.jpg\"><img decoding=\"async\" class=\"alignright aiif4218\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2013\/02\/image.jpg\" alt=\"Juevos rancheros\" width=\"236\" height=\"170\"><\/a><\/p>\n<p><strong>QUICK AND SIMPLE<\/strong><br \/>\n<strong>PHOTO SHOWN AT RIGHT<\/strong><\/p>\n<p>Corn tortilla heated and browned on both sides<br \/>\nSmear with refried beans<br \/>\nSprinkle with diced peppers<br \/>\nTop with scrambled egg disc<br \/>\nTop with shredded beef and salsa mixed together<br \/>\nTop with poached egg<br \/>\nSprinkle with cheese<br \/>\nBroil about five minutes<\/p>\n<hr>\n<h2><strong>Grandma&#8217;s Huevos Rancheros<br \/>\n<\/strong><\/h2>\n<p>2 fried or poached eggs<br \/>\n\u00bd tsp vegetable oil<br \/>\n1\/8 small onion<br \/>\n1\/8 sliced bell pepper<br \/>\n\u00bc clove garlic, chopped<br \/>\n\u00bc CU Salsa<br \/>\n1 TBL diced green chiles<br \/>\n2 corn tortillas<br \/>\n2 TBS shredded cheese<\/p>\n<p>1. Heat vegetable oil in large skillet<br \/>\n2. Saute onion, bell pepper and garlic<br \/>\n3. Add salsa and chiles &#8211; bring to boil, remove from heat<br \/>\n4. Top corn tortilla with 1\/3 CU sauce and one egg<br \/>\n5. Sprinkle with cheese<\/p>\n<hr>\n<h2><strong>Huevos Rancheros Casserole with Ranchero Sauce<\/strong><\/h2>\n<ul>\n<li>Place the canned and fresh tomatoes, the onion, jalape\u00f1o, garlic, water, chilies powder, salt, cumin, oregano, sugar and vinegar in a 2-quart saucepan. Simmer for 15 to 20 minutes.<\/li>\n<li>Preheat the oven to 350 degrees.<\/li>\n<li>While the sauce is simmering, prepare the tortillas and the eggs.<\/li>\n<li>Heat the oil in a skillet.<\/li>\n<li>Place a tortilla in the hot oil and fry just until softened.<\/li>\n<li>As each tortilla is done, place it on a plate.<\/li>\n<li>Repeat this procedure until all the tortillas are cooked.<\/li>\n<li>Oil a long baking dish (about 9 x 13 inches).<\/li>\n<li>Spoon half of the sauce over the bottom, then arrange the tortillas over the sauce.<\/li>\n<li>Top the tortillas with more sauce.<\/li>\n<li>Sprinkle with half of the grated cheddar cheese.<\/li>\n<li>Crack the eggs onto the cheese layer at intervals so that there will be a few inches between each egg.<\/li>\n<li>Spoon the remaining sauce over the length of the eggs and sprinkle with the remaining cheddar cheese.<\/li>\n<li>Bake for about 13 minutes at 350\u00ba<\/li>\n<li>Pierce one of the eggs with a sharp paring knife to check that the eggs are done as you like.<\/li>\n<li>After 20 minutes of baking, the eggs are hard- cooked.<\/li>\n<li>When the eggs are cooked to your liking, remove the pan from the oven and let cool for 10 minutes.<\/li>\n<li>To serve, cut the casserole into squares. Sprinkle with freshly grated cotija or feta cheese.<\/li>\n<\/ul>\n<p>Serves 6 to 8.<\/p>\n<p>Note: Cotija cheese is sold in small rounds, and is available in the dairy case of many supermarkets. It is easily crumbled. You can substitute feta cheese.<\/p>\n<hr>\n<h2>Black Olive Huevos<\/h2>\n<p>Options<br \/>\nAdd Black olives<br \/>\nUse a tomatillo rather than tomatoes<br \/>\nAdd Artichokes<br \/>\nTop with cilantro<br \/>\nInclude diced green chilies<br \/>\nUse tortilla chips or corn chips rather than corn tortilla<br \/>\nUse poached egg rather than Fried Egg<\/p>\n<p>Special Steps Break your egg into separate bowls. This will assure that you have an unbroken yolk. If you break the yolk, save this for scrambled eggs the following morning.<\/p>\n<h2><strong>Huevos Rancheros &#8211; SAUCE<\/strong><\/h2>\n<p>The Ranchero Sauce<br \/>\n&#8212; 1 large can (28 ounces) diced tomatoes with juice<br \/>\n&#8212; 2 fresh tomatoes, diced<br \/>\n&#8212; 1 cup diced onion<br \/>\n&#8212; 1 jalapeno chile, seeded and minced<br \/>\n&#8212; 2 minced cloves garlic<br \/>\n&#8212; 1 cup water<br \/>\n&#8212; 2 tablespoons red chile powder<br \/>\n&#8212; 1\/2 teaspoon salt<br \/>\n&#8212; 1\/2 teaspoon ground cumin<br \/>\n&#8212; 1 teaspoon oregano<br \/>\n&#8212; 1 teaspoon sugar<br \/>\n&#8212; 1 tablespoon vinegar<br \/>\nAdapted from Jacqueline Higuera McMahan, who grew up on a Bay Area rancho, and is the author of &#8220;California Rancho Cooking,&#8221; &#8220;The Salsa Book&#8221; and &#8220;The Chipotle Chile Cook Book.&#8221;<\/p>\n<h2><strong>America&#8217;s Test Kitchen<\/strong><\/h2>\n<ul>\n<li>1 Can diced tomatoes &#8211; strained &#8211; reserve liquid<\/li>\n<li>1 C strained reserved tomato juice<\/li>\n<li>2 tsp brown sugar<\/li>\n<li>1 tsp&nbsp; lime<\/li>\n<li>1\/2 Onion &#8211; diced<\/li>\n<li>4 tsp Chili powder<\/li>\n<li>1\/2 C canned green chilies<\/li>\n<li>2 garlic cloves &#8211; sliced thin<\/li>\n<li>2 TBL EVOO<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>1\/4 C pepper jack cheese<\/li>\n<li>4 eggs<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Strain diced tomatoes, reserving liquid<\/li>\n<li>Add brown sugar and lime to strained tomato juice<\/li>\n<li>To tomatoes, add onion. green chilies, garlic, EVOO, chili powder and salt\/pepper to taste<\/li>\n<li>Stir to combine<\/li>\n<li>Transfer to baking sheet lined with parchment paper or waxed paper<\/li>\n<li>Spread into an even layer<br \/>\nAlternately you can use a comal or a large cast iron skillet<\/li>\n<li>Bake at 500\u00ba for about 40 minutes<\/li>\n<li>Turn oven down to 400\u00ba<\/li>\n<li>Put cooked mixture into a glass baking dish, and add the strained\/reserved juice back into it, and stir to combine<\/li>\n<li>Sprinkle with pepper jack<\/li>\n<li>Nestle 1 egg at a time into an impression you will make in the sauce<\/li>\n<li>Season with salt and pepper<\/li>\n<li>Bake at 400\u00ba for 15 minutes<\/li>\n<li>Tent with aluminum for about 5 minutes<\/li>\n<li>Top with avocado, scallions and cilantro<\/li>\n<\/ol>\n<h2>GZ&#8217;s Huevos Rancheros<\/h2>\n<p><strong>Geofry Zakarian cooked with his two daughters Anna and Madeline<\/strong><\/p>\n<ul>\n<li>1 can of Refried beans or chili beans<\/li>\n<li>Pico de gallo &#8211;
