{"id":22670,"date":"2023-03-21T12:29:13","date_gmt":"2023-03-21T19:29:13","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=22670"},"modified":"2023-03-21T12:29:13","modified_gmt":"2023-03-21T19:29:13","slug":"nacho-potato-skins","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/nacho-potato-skins\/","title":{"rendered":"Nacho Potato Skins"},"content":{"rendered":"<p>Before we begin&#8230;<\/p>\n<ul>\n<li>When you grate potatoes for hashed browns, or cut them up for potato salad, don&#8217;t lose those wonderful potato skins.<\/li>\n<li>Cut off nice thick pieces for potato skins.<\/li>\n<li>Store them for up to a week in salt water<\/li>\n<li>These won&#8217;t be the &#8220;boats&#8221; you typically expect<\/li>\n<\/ul>\n<ol>\n<li>Cook up three strips of bacon (keep the grease)<\/li>\n<li>Chop into pieces<\/li>\n<li>Chop up chives<\/li>\n<li>Dry your potato skins with a paper towel<\/li>\n<li>Brush your potato skins with the bacon fat<\/li>\n<li>Bake at 425\u00ba for 20 minutes<\/li>\n<li>Put skins onto your heat-proof serving platter<\/li>\n<li>After the bacon has cooled a bit, mix your chopped bacon with\n<ul>\n<li>black olives<\/li>\n<li>chopped chives<\/li>\n<li>shredded cheddar cheese<\/li>\n<li>jalape\u00f1os<\/li>\n<li>nacho cheese<\/li>\n<\/ul>\n<\/li>\n<li>Put into hot oven for only 5 minutes<\/li>\n<li>Top with sour cream and cilantro<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Before we begin&#8230; When you grate potatoes for hashed browns, or cut them up for potato salad, don&#8217;t lose those wonderful potato skins.
