{"id":2252,"date":"2012-12-18T15:28:10","date_gmt":"2012-12-18T15:28:10","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2252"},"modified":"2021-01-25T17:53:35","modified_gmt":"2021-01-26T00:53:35","slug":"jalapeno-chili-sauce","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/jalapeno-chili-sauce\/","title":{"rendered":"Jalape\u00f1o Chili Sauce"},"content":{"rendered":"<p>Also referred to as Grandpa&#8217;s Jalape\u00f1o Puree<\/p>\n<p><span style=\"font-size: large; color: #ff0000;\">Before we begin&#8230;<\/span><\/p>\n<ul>\n<li>You can grow your own jalape\u00f1os if you life in a warm climate<\/li>\n<li>If you don&#8217;t, you can buy some at any Mexican grocery or even on Amazon.<\/li>\n<li>Any time you are blending the peppers, it will create a toxic gas cloud, so make sure you are in a well-ventilated environment<\/li>\n<\/ul>\n<p><span style=\"font-size: large; color: #ff0000;\">Ingredients to feed 4 people<\/span><\/p>\n<table>\n<tbody>\n<tr>\n<td>A whole bunch of jalape\u00f1os &#8211; red, green, it doesn&#8217;t matter Have some Thai chilies, throw them in there too; as well as your serranos and haba\u00f1eros if you wish hotter sauce.&nbsp; If you want a milder Chili Sauce, use Poblano, Anaheim, Bell or Banana peppers.<\/td>\n<td>You will also need water, white vinegar, sugar, cumin, tomato paste, garlic powder, onion powder and salt.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><span style=\"font-size: large; color: #ff0000;\">Step by Step<\/span><br \/>\n<a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/12\/2016-03-02-12.29.45.jpg\" rel=\"attachment wp-att-9230\"><img decoding=\"async\" class=\"alignright aiif9230\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/12\/2016-03-02-12.29.45.jpg\" alt=\"2016-03-02 12.29.45\" width=\"333\" height=\"333\"><\/a><\/p>\n<ol>\n<li>Fill quart mason jars with minced jalape\u00f1os<\/li>\n<li>Remove seeds before mincing for milder sauce, leave them in for hotter sauce<\/li>\n<li>Put into mason jar filling about one inch from the top<\/li>\n<li>Place in mixing cup 1\/2 C water, 1 C vinegar<\/li>\n<li>Microwave about 2 minutes<\/li>\n<li>Add 1 TBL salt<\/li>\n<li>Add 1 tsp cumin<\/li>\n<li>Mix all mixing cup ingredients to incorporate and dissolve<\/li>\n<li>Pour liquid into mason jars covering peppers<\/li>\n<li>Put the lid on and place jar on counter for a month or two or three &#8211; mine just finished eight months<\/li>\n<\/ol>\n<p>AFTER IT HAS CURED<br \/>\n<img decoding=\"async\" class=\"alignright aiif9234\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/12\/jal-chi-sauce.jpg\" alt=\"jal-chi-sauce\" width=\"333\" height=\"222\"><\/p>\n<ol>\n<li value=\"11\">Puree in blender &#8211; watch out for vapors they are TOXIC<\/li>\n<li>Push pulp through a strainer using a spatula into jars &#8211; discard solids<\/li>\n<li>Add tomato paste, garlic powder, onion powder and sugar<\/li>\n<li>Using standard canning procedures, cold pack and hot water batch for 20 minutes<\/li>\n<\/ol>\n<p><iframe title=\"Jalapeno Chili Sauce - Easy and Hotter then Hell\" width=\"840\" height=\"473\" src=\"https:\/\/www.youtube.com\/embed\/HZ-h6jPo29g?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe><\/p>\n<p><span style=\"font-size: large; color: #ff0000;\">Oh, one more thing&#8230;<\/span><\/p>\n<ul>\n<li>\n<div class=\"_oDd\" data-hveid=\"34\"><span class=\"_Tgc\">My niece uses this full strength.&nbsp; That is a bit too hot for me.&nbsp; This is hotter than Tabasco, and has a lot more flavor.&nbsp; You don&#8217;t need to use too much.<br \/>\n<\/span><\/div>\n<\/li>\n<li>My preferred use for this sauce is to make my <a href=\"https:\/\/www.grandpacooks.com\/recipes\/roberts-jalapeo-ketchup\/\">Jalape\u00f1o Ketchup<\/a>.<\/li>\n<li>If you are not good with doing things <em>to taste<\/em>, for each quart jar that you are aging and processing, Once you have pushed the pulp through a strainer, add 1 tsp salt, garlic powder and onion powder and 1\/4 C tomato paste.<\/li>\n<li>If you don&#8217;t know how to can things, <a href=\"https:\/\/www.pickyourown.org\/ketchup.htm\">here is a ketchup canning site<\/a>.&nbsp; Just follow the same procedure for your chili sauce<\/li>\n<\/ul>\n<p><span style=\"font-size: large; color: #ff0000;\">Shortcut Chili Sauce<\/span><\/p>\n<p>1\/2 CU Heintz Ketchup<br \/>\n1\/2 CU diced jalapenos (from can)<br \/>\n2 TBL cayenne sauce (Frank&#8217;s Red Hot or Durkee)<br \/>\n1 TBL rice vinegar<br \/>\n1 tsp garlic powder<br \/>\n1 tsp onion powder<br \/>\n1 TBL sesame oil<br \/>\n1 tsp cumin<br \/>\n1 tsp oregano<br \/>\n1 tsp salt<\/p>\n<p>1. Blend all ingredients until somewhat smooth.<br \/>\n2. Press through a sieve<br \/>\n3. Store in something like an old Tabasco bottle<br \/>\n4.
