Red Onions are good for things like French Onion Soup<br \/>\n2. When cutting onions, cut in half THROUGH the root. Cut horizontally, then vertically. Finally chop as you would normally, and what you end up with are small pieces<\/p>\n<p>#########<\/p>\n<p>Onion Soup, Madera<\/p>\n<p>Ingredients<\/p>\n<p>2 Vadalia Onions<br \/>\nGrapeseed Oil (high smoke point)<br \/>\n1.5 CU Madera Wine<br \/>\n2 CU Chicken Stock<br \/>\nChives<br \/>\nButter<br \/>\nThyme<br \/>\nBread Crumbs<\/p>\n<p>Instructions<\/p>\n<p>1. Shave onions as thinly as possible.<br \/>\n2. Heat oil to very hot.<br \/>\n3. Carmelize onions for about 15 minutes<br \/>\n4. Add thyme and Madera Wine<br \/>\n5. Cook another 15 minutes<br \/>\n6. Add chicken stock and butter, and bring to boil<br \/>\n7. Cook till browned<br \/>\n8. Pour into soup tureen<br \/>\n9.
