IN PROCESS"},"content":{"rendered":"<ul>\n<li>Get 4 poblano chilies\n<ul>\n<li>Brush with canola oil<\/li>\n<li>Bake in 450\u00ba oven for about 20-25 minutes<\/li>\n<li>Remove from oven and put into a bowl and cover<\/li>\n<\/ul>\n<\/li>\n<li>Turn oven down to 350\u00ba<\/li>\n<li>Lightly oil 4-6 chicken thighs &#8211; bone in without skin\n<ul>\n<li>Coat liberally with Thunder Powder<\/li>\n<li>Put into hot oven-safe pan with a bit of oil in the bottom<\/li>\n<li>Cook, sear, color &#8211; flip<\/li>\n<li>After flipping, cook 4 more minutes, then add chicken stock<\/li>\n<li>Add some BBQ sauce and ancho chili powder<\/li>\n<li>Cover and bake at 350\u00ba for an hour<\/li>\n<\/ul>\n<\/li>\n<li>Remove cover from bowl and pull away poblano skin\n<ul>\n<li>DO NOT RINSE.&nbsp; Just pull off using a paper towel.<\/li>\n<li>Put small slit into the pepper, then remove seeds<\/li>\n<\/ul>\n<\/li>\n<li>Lightly chop tomato, jalapenos, garlic, tomatillos\n<ul>\n<li>Puree in a blender<\/li>\n<li>Dump into a skillet<\/li>\n<li>Add some Mexican oregano, salt and pepper<\/li>\n<li>Bring to a boil, then let simmer<\/li>\n<\/ul>\n<\/li>\n<li>Fry up your corn tortilla strips &#8211; blue, white or yellow\n<ul>\n<li>Cut 5 tortillas into strips<\/li>\n<li>Put into hot oil and fry for 15-30 seconds each @ 365\u00ba<\/li>\n<li>Spider strainer them out onto a paper towel<\/li>\n<li>Salt them right away using Maldon salt<\/li>\n<\/ul>\n<\/li>\n<li>Shred a chicken thighs\n<ul>\n<li>Toss chicken into tomatillo sauce<\/li>\n<\/ul>\n<\/li>\n<li>Bring 1 C heavy cream to a simmer in a stock pot\n<ul>\n<li>Let slowly reduce<\/li>\n<li>Grate Chihuahua or Oaxaca cheese or Monerey Jack<\/li>\n<li>Dump into the hot cream<\/li>\n<li>Season with Salt and Pepper<\/li>\n<\/ul>\n<\/li>\n<li>Plate a schmear of the sauce\n<ul>\n<li>Top with Poblano<\/li>\n<li>Add your chicken and egg<\/li>\n<li>Top with roasted veggies<\/li>\n<\/ul>\n<\/li>\n<li>MIGAS:&nbsp; In a large mixing bowl, combine\n<ul>\n<li>2 roma tomatoes (quartered)<\/li>\n<li>1 tomatillos (quartered)<\/li>\n<li>1\/2 large red onion (diced)<\/li>\n<li>1 chipotle pepper (sliced)<\/li>\n<li>1 red bell (sliced)<\/li>\n<li>2 jalapeno peppers (sliced)<\/li>\n<li>1\/2&nbsp; tsp salt\n<ul>\n<li>Dump all into a large skillet<\/li>\n<li>Sautee until charred and blistered<\/li>\n<\/ul>\n<\/li>\n<li>Add 3-4 scrambled eggs<\/li>\n<li>Add some pulled chicken<\/li>\n<li>Add cilantro and tortilla chips<\/li>\n<li>Stuff Migas into Poblano<\/li>\n<li>Drizzle cheese sauce on top<\/li>\n<li>Top with Fresh chopped Cilantro<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Get 4 poblano chilies Brush with canola oil Bake in 450\u00ba oven for about 20-25 minutes Remove from oven and put into a bowl and cover Turn oven down to 350\u00ba Lightly oil 4-6 chicken thighs &#8211;
