{"id":2210,"date":"2012-11-27T23:00:28","date_gmt":"2012-11-27T23:00:28","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2210"},"modified":"2022-02-19T10:39:42","modified_gmt":"2022-02-19T17:39:42","slug":"breakfast-pizza","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/breakfast-pizza\/","title":{"rendered":"Breakfast Pizza"},"content":{"rendered":"<h2><strong>Pizza Dough (Optional *)<\/strong><\/h2>\n<p>ALTERNATE:&nbsp; Use a eight inch pita<\/p>\n<ul>\n<li>3 C High Gluten Flour<\/li>\n<li>1 T sugar<\/li>\n<li>1 Tsp Dry Yeast<\/li>\n<li>1 Cup Ice Water<\/li>\n<li>\u00bd Tsp Salt<\/li>\n<li>1 T Salad Oil (any light vegetable oil)<\/li>\n<\/ul>\n<ol>\n<li>Put flour, sugar and yeast into food processor and pulse 3 times<\/li>\n<li>Add 1 C ice water till it starts to form crumbles<\/li>\n<li>Let rest 10 minutes<\/li>\n<li>Add salad oil and salt<\/li>\n<li>Run food processor and drizzle in ICE water until it forms a ball<\/li>\n<li>Knead 3 minutes on the counter<\/li>\n<li>Cover and put into fridge for 24-48 hours to rise and let flavors develop<\/li>\n<li>Take dough ball and flatten into a rectangle or a circle<\/li>\n<li>Flatten with a roller then transfer to a baking sheet or a pizza pan<\/li>\n<li>Brush edges with EVOO<\/li>\n<li>Prebake dough about 5 minutes at 350\u00ba<\/li>\n<\/ol>\n<hr>\n<h2><strong>Modified Micro Hollandaise<\/strong><\/h2>\n<ul>\n<li>4 Egg Yolks<\/li>\n<li>1 Tbsp Water<\/li>\n<li>1\/4 C cheddar cheese<\/li>\n<li>1\/2 Cup Melted Butter<\/li>\n<li>3 \u00bd Tbsp Lemon Juice<\/li>\n<li>1\/8 Tsp White Pepper<\/li>\n<li>\u00bc Tsp Salt<\/li>\n<\/ul>\n<ol>\n<li>Put egg yolks, water and butter into a glass bowl<\/li>\n<li>Microwave for 10 seconds &#8211; remove and stir with a fork<\/li>\n<li>Repeat three times<\/li>\n<li>Add Lemon, pepper and salt.<\/li>\n<li>Microwave for 10 seconds &#8211; remove and stir with a fork<\/li>\n<li>Repeat until it BARELY starts to congeal<\/li>\n<li><em>For Chipotle Hollandaise, add 1\/4 tsp ground chipotle<\/em><\/li>\n<li>Stir with a fork until congealed lumps are absorbed<\/li>\n<li>Strain through a sieve to remove any lumps that may remain<\/li>\n<\/ol>\n<p><strong>For Mornaise Sauce substitute Swiss for Cheddar and cream for the water, <\/strong><\/p>\n<hr>\n<h2><strong>Simple Breakfast Pizza<\/strong><\/h2>\n<ol>\n<li>On pizza dough or pita&#8230;<\/li>\n<li>Mix 1\/4 C cottage cheese, 1\/4 C sour cream, 1 tsp oregano, 1 diced bell pepper, a pinch of cayenne pepper and 1 TBL EVOO &#8211; SET ASIDE<\/li>\n<li>In second bowl&#8230; that is Bowl Number 2 &#8211; mix 3 TBL grated Parmesan cheese with 1.5 C shredded mozzarella cheese &#8211; SET ASIDE<\/li>\n<li>Cook 3 pieces of bacon till crisp, then break into pieces<\/li>\n<li>Spread bowl #1 onto pizza crust leaving 1\/2 inch border<\/li>\n<li>Sprinkle crumbled bacon across the top<\/li>\n<li>Sprinkle mozzarella cheese mixture &#8211; Bowl #2<\/li>\n<li>Optional:&nbsp; Top with 4-6 unbroken eggs (sunny side up)<\/li>\n<li>Bake at 450\u00ba for 8-12 minutes<\/li>\n<\/ol>\n<hr>\n<h2><strong><strong>Brizza Pizza<br \/>\n<\/strong><\/strong><\/h2>\n<p><strong>garlic, spinach and mushroom breakfast pizza<\/strong><\/p>\n<ul>\n<li>On pizza dough or pita&#8230;<\/li>\n<li>1 small ball Dough<\/li>\n<li>2 Scrambled Eggs<\/li>\n<li>\u00bc Cup Marinated Spinach Leaves<\/li>\n<li>\u00bc Cup Sauteed Mushrooms<\/li>\n<li>\u00bc Cup Monterey Jack Cheese<\/li>\n<li>1\/4 Cup Hollandaise Sauce<\/li>\n<\/ul>\n<ol>\n<li>In an oiled frying pan scramble eggs.<\/li>\n<li>Place 1\/4 cup Hollandaise on the Brizza dough and spread evenly with a spoon or spatula.<\/li>\n<li>Evenly top the Hollandaise with the scrambled eggs followed by the marinated spinach leaves and saut\u00e9ed mushrooms.<\/li>\n<li>Top all ingredients with Monterey Jack cheese and place in a 400 degree oven for 4 minutes or until the cheese has melted and begun to turn light brown.<\/li>\n<li>Remove from oven and allow to sit for 1 minute.<\/li>\n<li>Cut into 4 slices, serve and enjoy.<\/li>\n<\/ol>\n<hr>\n<h2><strong>The Toluca<\/strong><\/h2>\n<ul>\n<li>On pizza dough or pita&#8230;<\/li>\n<li>Chipotle Hollandaise 1 fl. Oz<\/li>\n<li>Chorizo (cooked) 2 oz<\/li>\n<li>Scrambled Egg 1 each<\/li>\n<li>Red Pepper (diced) 1 oz<\/li>\n<li>Green Pepper (diced) 1 oz<\/li>\n<li>Jack Cheese 2 oz<\/li>\n<li>Jalapeno Cream Cheese 1 oz<\/li>\n<\/ul>\n<ol>\n<li>Place uncooked dough on prep table<\/li>\n<li>Ladle 1 fl.
