{"id":21948,"date":"2021-08-08T12:53:48","date_gmt":"2021-08-08T19:53:48","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21948"},"modified":"2023-04-26T12:23:15","modified_gmt":"2023-04-26T19:23:15","slug":"three-tub-cheesecake","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/three-tub-cheesecake\/","title":{"rendered":"4 ounce Cheesecake"},"content":{"rendered":"<p>You know, when you get a bagel, you sometimes have a left-over cream cheese.&nbsp; <a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2021\/08\/cream2.jpg\"><img decoding=\"async\" class=\"wp-image-21951 alignright\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2021\/08\/cream2.jpg\" alt=\"\" width=\"288\" height=\"191\" srcset=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2021\/08\/cream2.jpg 1042w, https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2021\/08\/cream2-768x511.jpg 768w\" sizes=\"(max-width: 288px) 85vw, 288px\" \/><\/a>This is a way you can put them to really good use.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 one-ounce packages of cream cheese (not cream cheese spread)<\/li>\n<li>1\/4 C granulated sugar<\/li>\n<li>2 TBL light Karo Syrup<\/li>\n<li>1 TBL corn starch<\/li>\n<li>1 TBL sour cream<\/li>\n<li>1 medium egg<\/li>\n<li>zest and juice from one lemon (about 2 TBL)<\/li>\n<li>1\/2 tsp vanilla extract<\/li>\n<\/ul>\n<p>Step by Step<\/p>\n<ol>\n<li>Butter the sides and bottom of two baking ramekins<\/li>\n<li>Cut strips of parchment paper about 2 inches wide and place around sides of each ramekin.<\/li>\n<li>Prepare graham crackers or cracker crust \u2013 press into BOTTOM ONLY of the ramekins (not the sides) See recipe at the bottom of this page.<\/li>\n<li>Beat cream cheese, sugar and Karo<\/li>\n<li>Add egg and sour cream and beat<\/li>\n<li>Add lemon and vanilla and beat to incorporate<\/li>\n<li>Pour equally into prepared graham cracker crust<\/li>\n<li>Place the baking pan in the bottom of a large casserole dish, and fill the larger dish with about 3\/4 inch of boiling hot water<\/li>\n<li>Lay foil lightly over top of each dish<\/li>\n<li>Bake at 350\u00ba for 25 minutes<\/li>\n<li>Cool at least 2 hours before serving<\/li>\n<li>Top with fresh blueberries, mandarin oranges, or lingonberry preserves<\/li>\n<\/ol>\n<p>CRUST<\/p>\n<ul>\n<li>Crush 2 whole graham crackers or 8 saltine crackers<\/li>\n<li>Mix with 2 TBL melted butter<\/li>\n<\/ul>\n<p>TOPPING OPTIONS<\/p>\n<p><em>For the sour cream topping:<\/em><\/p>\n<ul>\n<li class=\"ingredient\">1 cup sour cream<\/li>\n<li class=\"ingredient\">1\/4 cup powdered sugar<\/li>\n<li class=\"ingredient\">1\/2 teaspoon vanilla extract<\/li>\n<\/ul>\n<p><em>For the raspberry sauce:<\/em><\/p>\n<ul>\n<li class=\"ingredient\">6 ounces (340g) fresh raspberries<\/li>\n<li class=\"ingredient\">1\/4 cup granulated sugar (100g)<\/li>\n<li class=\"ingredient\">1\/4 cup water (120 ml)\n<ul>\n<li>Toss and allow to macerate<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><em>Caramel Ganache<\/em><\/p>\n<ul id=\"zlrecipe-ingredients-list\">\n<li class=\"ingredient \">14 individually wrapped Kraft Caramel candies -Approximately 4 oz<\/li>\n<li class=\"ingredient \">2 TBL butter<\/li>\n<li class=\"ingredient \">1\/4 tsp salt<\/li>\n<li class=\"ingredient \">2 TBL heavy whipping cream<\/li>\n<\/ul>\n<ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n<li class=\"instruction \">Prepare an ice water bath for when the caramel is melted<\/li>\n<li class=\"instruction \">Bring whipping cream and butter up to 195\u00ba and add the caramel pieces and salt<\/li>\n<li>Stir until smooth<\/li>\n<li class=\"instruction \">Place the pan with the caramel mixture into the ice water bath and beat with an electric mixer, stopping to scrap down the sides<\/li>\n<li class=\"instruction \">This will take about 5 minutes but eventually the mixture will get creamy and thicken.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>You know, when you get a bagel, you sometimes have a left-over cream cheese.&nbsp; This is a way you can put them to really good use.
