{"id":21911,"date":"2021-07-04T17:09:13","date_gmt":"2021-07-05T00:09:13","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21911"},"modified":"2021-07-04T17:26:35","modified_gmt":"2021-07-05T00:26:35","slug":"rugelach-cookies","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/rugelach-cookies\/","title":{"rendered":"Rugelach Cookies"},"content":{"rendered":"<p>BATTER<\/p>\n<ul>\n<li>8 ounces cream cheese, at room temperature<\/li>\n<li>1\/2-pound unsalted butter, at room temperature\n<ul>\n<li>MIX ABOVE, THEN ADD<\/li>\n<\/ul>\n<\/li>\n<li>1\/4 cup granulated sugar plus 9 tablespoons<\/li>\n<li>1\/4 teaspoon kosher salt<\/li>\n<li>1 teaspoon pure vanilla extract\n<ul>\n<li>MIX ABOVE, THEN SLOWLY ADD<\/li>\n<\/ul>\n<\/li>\n<li>2 cups all-purpose flour\n<ul>\n<li>DOUGH<\/li>\n<\/ul>\n<\/li>\n<li>1\/4 cup light brown sugar, packed<\/li>\n<li>1 1\/2 teaspoons ground cinnamon\n<ul>\n<li>FILLING &#8211; Make in separate bowl<\/li>\n<\/ul>\n<\/li>\n<li>3\/4 cup raisins<\/li>\n<li>1 cup walnuts, finely chopped<\/li>\n<li>1\/2 cup apricot preserves, pureed in a food processor\n<ul>\n<li>USED JUST BEFORE BAKING<\/li>\n<\/ul>\n<\/li>\n<li>1 egg beaten with 1 tablespoon milk, for egg wash<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<section id=\"mod-recipe-method-1\" class=\"o-Method\" data-module=\"recipe-method\" data-read-more-target=\"\">\n<div class=\"o-Method__m-Body\">\n<ol>\n<li class=\"o-Method__m-Step\">Cream the cheese and butter in the bowl of an electric mixer fitted with the paddle attachment until light.<\/li>\n<li class=\"o-Method__m-Step\">Add 1\/4 cup granulated sugar, the salt, and vanilla.<\/li>\n<li class=\"o-Method__m-Step\">With the mixer on low speed, add the flour and mix until just combined.<\/li>\n<li class=\"o-Method__m-Step\">Dump the dough out onto a well-floured board and roll it into a ball. Cut the ball in quarters, wrap each piece in plastic, and refrigerate for 1 hour.\n<ul>\n<li>FINISH TOPPING<\/li>\n<\/ul>\n<\/li>\n<li class=\"o-Method__m-Step\">Mix 6 tablespoons of granulated sugar, the brown sugar, 1\/2 teaspoon cinnamon\n<ul>\n<li class=\"o-Method__m-Step\">FILLING 1<\/li>\n<\/ul>\n<\/li>\n<li class=\"o-Method__m-Step\">Combine the raisins and walnuts with 2 tablespoons apricot preserves\n<ul>\n<li>ASSEMBLY<\/li>\n<\/ul>\n<\/li>\n<li class=\"o-Method__m-Step\">On a well-floured board, roll each ball of dough into a 9-inch circle.<\/li>\n<li>Bruch circle with the egg wash<\/li>\n<li>Sprinkle with 1\/2 cup of the Filling.
