{"id":21876,"date":"2021-07-04T08:08:19","date_gmt":"2021-07-04T15:08:19","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21876"},"modified":"2021-07-04T08:08:19","modified_gmt":"2021-07-04T15:08:19","slug":"steak-medallions","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/steak-medallions\/","title":{"rendered":"Steak Medallions"},"content":{"rendered":"<p>THIS IS A BRIEF FOR GRANDPA<\/p>\n<hr>\n<ol>\n<li>Prepare dry coating \/ seasoning<\/li>\n<li>Toss Fillet medallions into the dry seasoning<\/li>\n<li>Heat cast iron really hot and put in about 1 TBL canola oil<\/li>\n<li>Sear medallions 2 minutes per side for rare, 3 minutes for medium, then set aside.&nbsp; Don&#8217;t cook more than 3 minutes per side.<\/li>\n<li>Leave remaining &#8220;fond&#8221; to season the onions<\/li>\n<li>Add 1 TBL EVOO and 1 TBL butter<\/li>\n<li>Slice onions<\/li>\n<li>Put into skillet and cook 6-8 minutes<\/li>\n<li>Add 1 C white wine<\/li>\n<li>Stir to deglaze and reduce<\/li>\n<\/ol>\n<ul>\n<li>Meanwhile simmer baby potatoes for about 12 minutes<\/li>\n<li>Put onto a large serving plate and press with glass to break them open<\/li>\n<li>Sprinkle with Maldon salt<\/li>\n<li>Put a small cup of 1\/2 C horseradish sauce and 1\/4 C sour cream<\/li>\n<li>Put onions over top of the potatoes<\/li>\n<li>Top with fillet medallions<\/li>\n<li>Top with glazed onions<\/li>\n<li>Top with parsley<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>THIS IS A BRIEF FOR GRANDPA Prepare dry coating \/ seasoning Toss Fillet medallions into the dry seasoning Heat cast iron really hot and put in about 1 TBL canola oil Sear medallions 2 minutes per side for rare, 3 minutes for medium, then set aside.&nbsp; Don&#8217;t cook more than 3 minutes per side.
