{"id":2182,"date":"2012-11-02T04:29:11","date_gmt":"2012-11-02T04:29:11","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2182"},"modified":"2021-07-04T14:00:19","modified_gmt":"2021-07-04T21:00:19","slug":"old-fashioned-butterscotch-pie","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/old-fashioned-butterscotch-pie\/","title":{"rendered":"Old-fashioned Butterscotch Pie"},"content":{"rendered":"<p>This recipe calls for dark brown sugar for a deeper flavor, otherwise prepare it with light brown sugar for a lighter color and flavor.<\/p>\n<p>INGREDIENTS<\/p>\n<ul>\n<li>Fully Baked Pastry Shell\n<ul>\n<li>For Filling:<\/li>\n<\/ul>\n<\/li>\n<li>1 1\/2 C packed brown sugar<\/li>\n<li>1\/4 C all-purpose flour<\/li>\n<li>1\/8 tsp salt<\/li>\n<li>3 TBL cornstarch<\/li>\n<li>3 beaten egg yolks<\/li>\n<li>1 1\/2 cups milk (very hot)<\/li>\n<li>2 TBL heavy cream<\/li>\n<li>2 TBL margarine or butter<\/li>\n<li>1 tsp vanilla\n<ul>\n<li>For Meringue:<\/li>\n<\/ul>\n<\/li>\n<li>3 egg whites<\/li>\n<li>1\/4 teaspoon cream of tartar<\/li>\n<li>6 tablespoons sugar<\/li>\n<\/ul>\n<p>Other necessary recipes: Basic Pie Pastry<\/p>\n<p>STEP BY STEP<\/p>\n<p>FOR FILLING:<\/p>\n<ol>\n<li>Prepare and fully bake pastry shell as directed\n<ul>\n<li>Set aside to cool.<\/li>\n<\/ul>\n<\/li>\n<li>In a heavy, medium saucepan stir together the brown sugar, flour, and salt.<\/li>\n<li>Temper egg yolks into hot milk.<\/li>\n<li>Cook while stirring with a wire whisk till thickened<\/li>\n<li>Cook and stir 2 minutes more. Remove from heat.<\/li>\n<li>Stir in margarine or butter and vanilla.<\/li>\n<li>Pour hot filling into baked pastry shell.<\/li>\n<\/ol>\n<p>FOR MERINGUE:<\/p>\n<ol>\n<li>In a mixing bowl beat egg whites and cream of tartar with an electric mixer on medium speed about 1 minute, or till soft peaks form (tips curl).<\/li>\n<li>Gradually add sugar, 1 tablespoon at a time, beating on high speed about 4 minutes more, or till mixture forms stiff, glossy peaks (tips stand straight) and sugar completely dissolves.<\/li>\n<li>Immediately spread meringue over hot filling, spreading to edge of pastry to seal and prevent shrinkage.<\/li>\n<li>Bake pie in a preheated 350 degrees oven for 15 minutes.<\/li>\n<li>Cool on a rack for 1 hour.<\/li>\n<li>Chill 3-6 hours before serving.
