{"id":21780,"date":"2021-05-16T08:30:20","date_gmt":"2021-05-16T15:30:20","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21780"},"modified":"2024-01-30T11:53:08","modified_gmt":"2024-01-30T18:53:08","slug":"bad-banana-banana-bread","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/bad-banana-banana-bread\/","title":{"rendered":"Beatitudes Bad Banana Banana Bread"},"content":{"rendered":"<p>BISQUICK RECIPE AT THE BOTTOM OF THIS PAGE.<\/p>\n<p>We&#8217;ve all bought bananas and had them go brown on the counter.&nbsp; All is not lost.&nbsp; Here is an easy recipe that Beatitudes Residents can use for those times.<\/p>\n<p><strong>INGREDIENTS FOR TWO SMALL LOAVES<br \/>\n<\/strong><\/p>\n<p><strong>FIRST BOWL:<\/strong><\/p>\n<ul>\n<li>2 TBL softened margarine<\/li>\n<li>1\/4 CU white granulated sugar<\/li>\n<li>1\/4 CU brown sugar<\/li>\n<li>1 egg<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<li>2 TSP lemon juice<\/li>\n<li>1-2 over-ripe bananas \u2013 mashed<\/li>\n<\/ul>\n<p><strong>SECOND BOWL:<\/strong><\/p>\n<p>You can use these ingredients, or simply use 1 1\/2 C Bisquick.&nbsp; The recipe for Bisquick is at the bottom of this page, if you want to make your own.<\/p>\n<ul>\n<li>1 1\/4 CU white flour<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1\/4 CU softened margarine<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>1 tsp powdered ginger &#8211; or better yet 2 tsp grated ginger<br \/>\neven better 1 TBL candied ginger<\/li>\n<li>NOTE: I prefer to pulse the ginger with a bit of the sugar to make small chunks of ginger.<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><br \/>\n1. Preheat oven to 300\u00ba F<br \/>\n2. IN FIRST (LARGE) BOWL &#8211; &#8211; Cream butter and sugars together<br \/>\n3. Add eggs, one at a time, beating until smooth after each egg<br \/>\n4. Mix in mashed bananas, vanilla, and lemon juice<br \/>\n5. IN SECOND BOWL sift and mix all dry ingredients together<br \/>\n(or just use Bisquick)<br \/>\n6. Add dry mixture to first bowl, stir to moisten. Do not over-mix.<br \/>\n7. Transfer to greased loaf pans (or pans lined with parchment paper)<br \/>\n8. Lay a sheet of foil or parchment paper loosely over the top, and bake 35 minutes.<br \/>\n9. Remove foil after baking 35 minutes<br \/>\nIncrease heat to 350\u00ba and continue to bake for 15 more minutes.<br \/>\n10. Let stand ten minutes before removing from pan<br \/>\n11. Place released loaf on cake rack to cool<br \/>\nThis will make TWO 2\u00bd x 4\u00bd baking dishes<\/p>\n<p><strong>Options:<\/strong><br \/>\n1. Replace the ginger with chopped walnuts<br \/>\n2. Add raisins, dates, or dried cranberries rather (or in addition to) the ginger<br \/>\n3. We like to add \u00bc C instant oatmeal to ours.<\/p>\n<div class=\"mv-create-ingredients\">\n<h2 class=\"mv-create-ingredients-title mv-create-title-secondary\">Ingredients for Making your own Bisquick<\/h2>\n<ul>\n<li>4 cups all-purpose flour<\/li>\n<li>1 tablespoons baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1\/2 tablespoon salt<\/li>\n<li>1\/2 cup butter &#8211; cubed<\/li>\n<\/ul>\n<\/div>\n<div class=\"mv-create-instructions\">\n<p class=\"mv-create-instructions-title mv-create-title-secondary\"><span style=\"font-size: 18pt;\"><strong>Step by Step<\/strong><\/span><\/p>\n<ol>\n<li id=\"mv_create_647_1\">Add everything except the butter into the bowl of a food processor.<\/li>\n<li id=\"mv_create_647_2\">Pulse ingredients for about 15 seconds.<\/li>\n<li id=\"mv_create_647_3\">Add in the vegetable shortening and pulse the processor until the mixture resembles cornmeal.<\/li>\n<li id=\"mv_create_647_4\">Place homemade Bisquick into an airtight container and store within the refrigerator for up to 3 months.<\/li>\n<\/ol>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>BISQUICK RECIPE AT THE BOTTOM OF THIS PAGE.
