{"id":21630,"date":"2021-03-29T14:51:09","date_gmt":"2021-03-29T21:51:09","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21630"},"modified":"2021-03-29T16:01:49","modified_gmt":"2021-03-29T23:01:49","slug":"sourdough-french-bread","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/sourdough-french-bread\/","title":{"rendered":"Sourdough French Bread"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 cup water<\/li>\n<li>1\/2 cup active sourdough starter<\/li>\n<li>2 C AP flour, 200 grams<\/li>\n<li>2 tsp raw honey<\/li>\n<li>2 tsp Instant Yeast or Quick Rise Yeast (Not Active Dry)<\/li>\n<li>1\/2 tsp sea salt<\/li>\n<li>1 TBL olive oil<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>MAKE THE DOUGH\n<ul>\n<li>Place all of the dough ingredients in the bowl of a stand mixer.<\/li>\n<li>Mix with a spatula until it somewhat comes together<\/li>\n<li>Put a dough hook on the mixer<\/li>\n<li>Knead on low speed for 5 minutes, then increase to medium low and mix for another 10 minutes<\/li>\n<li>The dough should be soft, and put from the sides of the bowl<\/li>\n<li>Add more flour if the dough seems very wet, but better too wet, than too dry<\/li>\n<li>Transfer the dough to a lightly greased, large glass bowl, turning once to grease the top of the dough.<\/li>\n<li>Cover and allow to rise in the refrigerator for 10-20 hours.<\/li>\n<\/ul>\n<\/li>\n<li>FORM THE LOAF\n<ul>\n<li>The next day, flour your work surface<\/li>\n<li>Put the dough on the counter and pat it out to a rectangle.<\/li>\n<li>Grab the far edge of both sides of the dough and stretch it up and over to the middle of the dough.<\/li>\n<li>Use the side of your hand to press the loaf flat<\/li>\n<li>Repeat about eight times.<\/li>\n<li>Form into a elongated pillow and put it on a parchment lined baking sheet<\/li>\n<\/ul>\n<\/li>\n<li>SECOND RISE\n<ul>\n<li>Cover with a tea towel and allow to rise in a warm spot until doubled.
