{"id":2142,"date":"2012-10-22T05:33:26","date_gmt":"2012-10-22T05:33:26","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2142"},"modified":"2021-01-09T09:56:05","modified_gmt":"2021-01-09T16:56:05","slug":"upside-down-cake","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/upside-down-cake\/","title":{"rendered":"Brandon&#8217;s Pineapple Upside Down Cake"},"content":{"rendered":"<p>Ingredients<\/p>\n<ul>\n<li>1\/2 CU butter<\/li>\n<li>1 CU packed brown sugar<\/li>\n<li>1\/4 CU corn syrup<\/li>\n<li>3\/4 CU chopped pecans (optional)<\/li>\n<li>20 OZ pineapple slices (drained &#8211; save juice)<\/li>\n<li>3 eggs (separated)<\/li>\n<li>2 TBL lemon juice<\/li>\n<li>1 CU sugar<\/li>\n<li>1 CU all-purpose flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1\/4 tsp cinnamon<\/li>\n<li>1\/4 tsp nutmeg<\/li>\n<li>1\/8 tsp ginger<\/li>\n<li>scant salt<\/li>\n<li>Maraschino cherries<\/li>\n<\/ul>\n<p>Instructions<\/p>\n<p>1. Preheat oven to 350 degrees<br \/>\n2. Melt butter in 9 inch cast iron skillet<br \/>\n3. Mix in brown sugar, corn syrup and pecans, then remove from heat<br \/>\n4. Artistically arrange pineapple pieces or rings over the brown sugar mixture<br \/>\n5. Set the skillet aside for now<br \/>\n6. Beat egg yolks.<br \/>\n7. Add sugar, beating continually<br \/>\n8. Add flour mixture and stir in 5 TBL pineapple juice<br \/>\n9. In a clean bowl, beat egg whites until stiff peaks form<br \/>\n10. Fold whites into cake batter<br \/>\n11. Pour or spoon evenly over pineapple slices<br \/>\n12. Bake @ 350 degrees for 45 minutes<br \/>\n13. Cool skillet for 30 minutes, then invert onto serving plate<br \/>\n14.
