{"id":2122,"date":"2012-10-21T23:54:27","date_gmt":"2012-10-21T23:54:27","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2122"},"modified":"2020-07-29T10:47:33","modified_gmt":"2020-07-29T17:47:33","slug":"picture-perfect-pancakes","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/picture-perfect-pancakes\/","title":{"rendered":"Picture Perfect Pancakes"},"content":{"rendered":"<p>1 CU milk (buttermilk or whole milk)<br \/>\n1 TBL lemon juice<br \/>\n1 tsp vanilla<br \/>\n&#8211;<br \/>\nFrozen blueberries<br \/>\nYou can also use strawberries, mangos, bananas, etc.<br \/>\n&#8211;<br \/>\n1 CU flour (unbleached all purpose)<br \/>\n1\/2 CU whole wheat flour OR 1\/4 CU mesquite meal<br \/>\n1\/2 tsp baking soda<br \/>\n2 tsp baking powder<br \/>\n2 tbl sugar<br \/>\n1\/2 tsp salt<br \/>\n1\/2 tsp cinnamon<br \/>\n1\/4 tsp nutmeg<br \/>\n&#8211;<br \/>\n2 eggs (yolks separated)<br \/>\n3 TBL very soft butter (but not melted)<\/p>\n<p>Instructions<\/p>\n<p>1. Mix milk and lemon juice, set aside to thicken.<br \/>\n2. Rinse berries under cold water, set aside on paper towel to drain.<br \/>\n3. Mix dry ingredients<br \/>\n4. Cut beaten egg yolk &amp; butter into milk mixture &#8211; Keep egg white aside<br \/>\n5. Combine wet and dry ingredients (not egg whites)<br \/>\n&#8211; &#8211; Beat no more than 10 times or you will activate the gluten<br \/>\n6. Heat griddle to med<br \/>\n7. As griddle heats up beat egg whites until they come to a soft peak<br \/>\n8. Fold whites into the rest of the batter<br \/>\n9. Gently fold fruit into the batter<br \/>\n10. Oil griddle lightly, then pour one \u201csacrificial\u201d pancake<br \/>\n11. Pour pancakes to serve (See note on Special Steps)<br \/>\n12. Flip when bubbles break.<\/p>\n<p>If you are cooking lots of pancakes, put finished pancakes on the cooking rack at 200\u00b0 for up to 20 minutes.<\/p>\n<p>Special Steps<\/p>\n<p>If you use a small omelet pan to cook the FIRST side of the pancake, and then flip it into a second larger pan to finish cooking, each pancake will be exactly the same size.<\/p>\n<p>Variations<\/p>\n<p>1. Microwave frozen berries as a topping instead of syrup<br \/>\n2. For thinner pancakes add an extra 1\/4 cup of milk<br \/>\n3. For pancakes with a sharper taste, use plain yogurt instead of milk, increase amount by 1\/4 or 1\/2 cup, depending on amount mixed<br \/>\n4. For more than 2 people, 4 pancakes each, just double or triple the recipe.<br \/>\n5. This recipe shows the use of blueberries. For regular pancakes, just eliminate steps 2 and 9.<br \/>\n6. Make extras to freeze. Pop into toaster for a quick breakfast<br \/>\n7. To make them fluffier, separate your egg yolk and whites.<\/p>\n<p>Use yolks at Step 4, and gently fold in (add) whites (beaten to peaks) just after Step 5.<\/p>\n<p>Notes Do not over-mix, or you will activate the gluten &amp; make your pancakes tough. Lumps &amp; streaks of flour are OK. It&#8217;s not necessary to have it completely smooth.
