{"id":21212,"date":"2021-01-26T12:26:43","date_gmt":"2021-01-26T19:26:43","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21212"},"modified":"2021-01-26T12:27:51","modified_gmt":"2021-01-26T19:27:51","slug":"spinach-and-poblano-enchilada","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/spinach-and-poblano-enchilada\/","title":{"rendered":"Spinach and Poblano Enchilada"},"content":{"rendered":"<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/enchilada-sauce\/\">SELECT YOUR FAVORITE ENCHILADA SAUCE<\/a> then proceed with recipe.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 CU red enchilada sauce<\/li>\n<li>3 peeled roasted red peppers or poblanos<\/li>\n<li>2 tomatillos<\/li>\n<li>1\/2 CU (minced) cilantro<\/li>\n<li>1 can green enchilada sauce<\/li>\n<li>6 tortillas (5 to 6 in. wide)<\/li>\n<li>1 CU pressed steamed and chopped spinach<\/li>\n<li>3 ounces cream cheese or queso blanco<\/li>\n<li>1\/4 cup shredded Parmesan cheese or packed crumbled Cotijo cheese<\/li>\n<li>6 medium-sized eggs<\/li>\n<li>3\/4 CU shredded mild cheddar cheese (6 oz.)<\/li>\n<li>1\/4 CU thinly sliced green onions, including tops<\/li>\n<li>1\/4 CU sour cream or Mexican crema<\/li>\n<li>Salt<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>In a blender, whirl red enchilada sauce and roasted red peppers until smooth.<\/li>\n<li>In a bowl, mix green salsa with green enchilada sauce.<\/li>\n<li>Set three ramekins (about 2 cups each, 5 to 6 in. wide or long) on large baking sheets.<\/li>\n<li>Pour red sauce mixture equally into ramekins and tilt to coat bottoms.<\/li>\n<li>Cut tortillas into quarters.<\/li>\n<li>Arrange four pieces in each ramekin, overlapping edges to cover bottom and pressing tortillas down into sauce.<\/li>\n<li>Scatter spinach, cream cheese, and 1\/4 cup Parmesan evenly over tortillas.<\/li>\n<li>Lay another four pieces of tortilla over filling in each ramekin; overlap edges to fit.<\/li>\n<li>Spoon green sauce over tortillas, coating evenly.<\/li>\n<li>Bake, uncovered, in a 375F oven until sauce is bubbling, about 25 minutes (25 to 30 if chilled).<\/li>\n<li>Remove pan from oven and immediately, with the back of a large spoon, make one or two slight depressions for eggs near center of each ramekin.<\/li>\n<li>Break one or two eggs into each ramekin; sprinkle evenly with cheddar cheese.<\/li>\n<li>Return to oven and bake 10 to 12 minutes longer for soft yolks (press yolk gently to test), 12 to 15 minutes for firm yolks.<\/li>\n<li>Top each ramekin with green onions, cilantro, a spoonful of sour cream, and a sprinkling of remaining parmesan cheese.<\/li>\n<li>Set ramekins on plates.<\/li>\n<li>Add salt to taste.
