{"id":21202,"date":"2021-01-26T12:13:56","date_gmt":"2021-01-26T19:13:56","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=21202"},"modified":"2021-01-26T12:14:57","modified_gmt":"2021-01-26T19:14:57","slug":"red-enchilada-sauce","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/red-enchilada-sauce\/","title":{"rendered":"Grandpa&#8217;s Red Enchilada Sauce"},"content":{"rendered":"<p>This recipe takes a little bit of time to make, but it is actually very easy.<\/p>\n<p><strong><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/09\/IMG_1822.jpg\"><img decoding=\"async\" class=\"size-medium aiif12904 alignright\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2016\/09\/IMG_1822.jpg\" alt=\"\" width=\"300px\" height=\"225px\"><\/a>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1\/2 C dried ancho chiles (5-6 dried chilies)<br \/>\nRemove stem and seeds &#8211; tear apart<\/li>\n<li>1 TBL EVOO<\/li>\n<li>1 TBL butter<br \/>\n&#8211;<\/li>\n<li>1\/4 lb ground pork<\/li>\n<li>&nbsp;<\/li>\n<li>1 tsp each &#8211; cumin, corriander<\/li>\n<li>1\/2 tsp salt, pepper, garlic powder<\/li>\n<li>1\/4 C grated or minced onion<\/li>\n<li>4 cloves of garlic<\/li>\n<li>1 bay leaf<\/li>\n<li>1 tsp chili powder<\/li>\n<li>1 tsp cumin<\/li>\n<li>2 TBL tomato paste<\/li>\n<li>2 TBL flour<\/li>\n<li>1 can tomato pieces<\/li>\n<li>2 C broth<\/li>\n<li>2 tsp corn starch &#8211; not added yet<\/li>\n<li>juice from two limes &#8211; not added yet<\/li>\n<li>1 fist full of fresh cilantro &#8211; not cooked<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Heat EVOO and butter in a large deep skillet<\/li>\n<li>Add the dried chiles &#8211; cook till softened<\/li>\n<li>Add onion and tomato paste &#8211; cook till onion is softened<\/li>\n<li>Add pork and cook until browned<\/li>\n<li>Add bay, powdered and flaked ingredients &#8211; heat till aromatic<\/li>\n<li>Add flour &#8211; cook till browned<\/li>\n<li>Add canned tomato &#8211; stir till incorporated<\/li>\n<li>Add broth &#8211; stir till incorporated<\/li>\n<li>Simmer for abut 15 minutes.<\/li>\n<li>Meanwhile, mix corn starch well with the lime juice<\/li>\n<li>Drizzle corn starch mixture into the pan, stirring well<\/li>\n<li>Cook until thickened<\/li>\n<li>Add fresh cilantro<\/li>\n<li>Blend (puree) in a blender<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This recipe takes a little bit of time to make, but it is actually very easy.
