Cut and deseed your squash (see Toasted Pumpkin Seeds)<br \/>\n2. Cut into two inch cubes (leaving skin on)<br \/>\n3. Toss in bowl with olive oil and spices (excluding Sage)<br \/>\n4. Put on sheet pan, set foil over top, and cook @ 350 degrees for 45 minutes<br \/>\n5. Remove skin and puree soft meat<br \/>\n6. Mix with Vegetable Stock and tomatoes in large sauce pan<br \/>\n7. Add sage twigs and turn heat to high (time to move quickly\u2026)<br \/>\n8. Add maple syrup OR honey OR sugar<br \/>\n9. After about 2 minutes from the time you turned heat up, remove sage twigs, add dolop of butter and serve<\/p>\n<p>\u2026 OR mix melted butter into soup, and put milk into blender to create foam that goes nicely on top of pumpkin soup<\/p>\n<p>Garnish with nutmeg<\/p>\n<p>Special Steps<br \/>\nSquash should sound solid, not hollow.<\/p>\n<h2>Pumpkin Soup #2<\/h2>\n<p>Ingredients<\/p>\n<p>Leek (white part only)<br \/>\nPumpkin pieces<br \/>\nNutmeg<br \/>\nStock<\/p>\n<p>Instructions<\/p>\n<p>1. Saut\u00e9 leek, add pumpkins pieces, nutmeg and stock to cover.<br \/>\n2. Bring to heat (done), blender. Crushed cookie on top.<\/p>\n<p>Special Steps<br \/>\nServe with ginger cookies<\/p>\n<h2>Pumpkins Soup #3<\/h2>\n<p>Ingredients<\/p>\n<p>Pumpkin<br \/>\nCloves<br \/>\nOlive oil<br \/>\nSalt<br \/>\nCinnamon<br \/>\nBroth<br \/>\nWhole sage<br \/>\nButter<br \/>\nMilk<br \/>\nnutmeg<\/p>\n<p>Instructions<\/p>\n<p>1. Toss pumpkin pieces with olive oil, salt, cloves, cinnamon.<br \/>\n2. Arrange down on sheet pan.<br \/>\n3. Bake at 325\u00b0 for 45 min.<br \/>\n4. Puree broth, whole sage for 5 min \u2013 remove sage.
