{"id":20610,"date":"2020-12-30T13:57:55","date_gmt":"2020-12-30T20:57:55","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=20610"},"modified":"2020-12-31T17:06:46","modified_gmt":"2021-01-01T00:06:46","slug":"wassail","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/wassail\/","title":{"rendered":"Wassail"},"content":{"rendered":"<ul>\n<li>Put the following into a muslin bag\n<ul>\n<li>10 cloves<\/li>\n<li>10 alspice berries<\/li>\n<li>1 stick cinnamon<\/li>\n<li>ground ginger<\/li>\n<li>nutmeg<\/li>\n<\/ul>\n<\/li>\n<li>1 full bottle Madeira wine (750 ml)<\/li>\n<li>72 ounces top fermented English beer (1 &#8211; 6 pack)<\/li>\n<li>Put pan on low heat<\/li>\n<li>Put in spices<\/li>\n<li>Add Madeira<\/li>\n<li>Add ale<\/li>\n<li>Bring to 120\u00ba<\/li>\n<li>Add 6 eggs &#8211; separated\n<ul>\n<li>Bring whites to stiff peaks<\/li>\n<li>Beat yolks to ribbon stage<\/li>\n<li>Work white foam into the yolks<\/li>\n<\/ul>\n<\/li>\n<li>Temper hot ale into the eggs,<\/li>\n<li>Remove spice bag, and then eggs return to the pot<\/li>\n<\/ul>\n<p>From Alton<\/p>\n<ul>\n<li>&nbsp;6 small Fuji apples, cored<\/li>\n<li>1 cup brown sugar<\/li>\n<li>1 cup water<\/li>\n<li>72 ounces ale<\/li>\n<li>750 ml Madeira<\/li>\n<li>10 whole cloves<\/li>\n<li>10 whole allspice berries<\/li>\n<li>1 cinnamon stick, 2-inches long<\/li>\n<li>1 teaspoon ground ginger<\/li>\n<li>1 teaspoon ground nutmeg<\/li>\n<li>6 large eggs, separated<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ol>\n<li>Preheat the oven to 350 degrees F.<\/li>\n<li>Put the apples into an 8 by 8-inch glass baking dish.<\/li>\n<li>Spoon the brown sugar into the center of each apple, dividing the sugar evenly among them.<\/li>\n<li>Pour the water into the bottom of the dish and bake until tender, about 45 minutes.<\/li>\n<li>Pour the ale and Madeira into a large slow cooker.<\/li>\n<li>Put the cloves, allspice, and cinnamon into a small muslin bag or cheesecloth, tied with kitchen twine, and add to the slow cooker along with the ginger and nutmeg.<\/li>\n<li>Set the slow cooker to medium heat and bring the mixture to at least 120 degrees F.
