In a large saut\u00e9 pan, heat olive oil over medium. Add onions and garlic and saut\u00e9 until onions are translucent, about 1 minute. Add wine, tomatoes and eggplant and cook until wine is almost evaporated.<br \/>\n2. Add olives and capers and cook over medium heat until eggplant is soft, stirring occasionally to prevent sticking. Mixture will become thicker, about 5 minutes. Turn off heat and add herbs and salt and pepper to taste.<br \/>\n3.
