{"id":20390,"date":"2020-09-27T13:50:41","date_gmt":"2020-09-27T20:50:41","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=20390"},"modified":"2020-09-27T13:50:41","modified_gmt":"2020-09-27T20:50:41","slug":"ball-park-pretzels","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/ball-park-pretzels\/","title":{"rendered":"Ball Park Pretzels"},"content":{"rendered":"<p>Ingredients<\/p>\n<ul>\n<li>1 1\/2 cups warm (110 to 115 degrees F) water<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>2 teaspoons kosher salt<\/li>\n<li>1 package active dry yeast<\/li>\n<li>22 ounces all-purpose flour, approximately 4 1\/2 cups<\/li>\n<li>2 ounces unsalted butter, melted<\/li>\n<li>Vegetable oil, for pan<\/li>\n<li>10 cups water<\/li>\n<li>2\/3 cup baking soda<\/li>\n<li>1 large egg yolk beaten with 1 tablespoon water<\/li>\n<li>Pretzel salt<\/li>\n<\/ul>\n<p>Step by Step<\/p>\n<ol>\n<li>Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top.<\/li>\n<li>Allow to sit for 5 minutes or until the mixture begins to foam.<\/li>\n<li>Add the flour and butter and, using the dough hook attachment, mix on low speed until well combined.<\/li>\n<li>Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes.<\/li>\n<li>Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil.<\/li>\n<li>Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.<\/li>\n<li>Preheat the oven to 450 degrees F.<\/li>\n<li>Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil.
