{"id":20369,"date":"2020-09-27T11:19:34","date_gmt":"2020-09-27T18:19:34","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=20369"},"modified":"2020-09-27T11:27:44","modified_gmt":"2020-09-27T18:27:44","slug":"marzetti-copy-cat","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/marzetti-copy-cat\/","title":{"rendered":"Marzetti Copy Cat"},"content":{"rendered":"<p>This &#8220;Copycat&#8221; recipe is because it seems that since CoVid hit, all the stores are out of Marzetti Slaw Dressing.&nbsp; This is the best I&#8217;ve been able to find as far as making my own.<\/p>\n<ul>\n<li>1 C Scratch Mayonnaise (see below or buy prepared mayo)<\/li>\n<li>1\/2 C confectioner sugar<\/li>\n<li>2 TBL C white distilled vinegar<\/li>\n<li>1 TBL prepared dried mustard (not Chinese)<\/li>\n<li>1 tsp celery salt<\/li>\n<\/ul>\n<ol>\n<li class=\"recipe-directions__step\">Combine all ingredients in bowl and mix well.<\/li>\n<li>Keep in the fridge for a month or so.<\/li>\n<\/ol>\n<p>To use, slice cabbage and mix.&nbsp; Let meld for an hour in the fridge<\/p>\n<h2>Make Mayo from Scratch<\/h2>\n<p><strong>CRITICAL<\/strong>: Mis en place\u2026 PREPARE ALL INGREDIENTS PRIOR TO STARTING, AND BRING EVERYTHING UP TO ROOM TEMPERATURE.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/4 cup water<\/li>\n<li>1 TBL instant milk<\/li>\n<li>2 NEW egg yolks \u2013 pasteurized only (save the white2)<\/li>\n<li>1\/2 tsp dry mustard<\/li>\n<li>1 tsp salt<\/li>\n<li>2 tsp honey<\/li>\n<li>1 TBL&nbsp; citric acid<br \/>\n\u2013<\/li>\n<li>Later:&nbsp; 1 cup safflower oil (Alt:&nbsp; Canola, Sunflower, Corn, Vegetable, Rapeseed, Avocado)<\/li>\n<\/ul>\n<p><strong>Step by Step<\/strong><\/p>\n<ol>\n<li>Blend everything above except the oil<\/li>\n<li>With food processor or blender running, drizzle \u00bd cup oil slowly \u2013 drop by drop<\/li>\n<li>Add up to \u00bd cup additional oil as necessary, blending continually<\/li>\n<li>If the mayo become too thick, drizzle in a bit of water or lemon juice<\/li>\n<li>Let rest at room temperature for 6-8 hours<\/li>\n<li>Refrigerate for up to 10 days<\/li>\n<\/ol>\n<hr>\n<p><strong>NOTES<\/strong><\/p>\n<ul>\n<li>If not using immediately, scrape it into a clean, dry container with a tight lid and refrigerate.
