{"id":2032,"date":"2012-10-20T23:20:51","date_gmt":"2012-10-20T23:20:51","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=2032"},"modified":"2017-12-02T23:07:02","modified_gmt":"2017-12-03T06:07:02","slug":"swiss-enchiladas","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/swiss-enchiladas\/","title":{"rendered":"Swiss Enchiladas"},"content":{"rendered":"<p>from Recipe du Jour<\/p>\n<p>Cooking spray<br \/>\n1 1\/2 cups chopped onion<br \/>\n2 cups chopped roasted skinless, boneless chicken breast (about 2<br \/>\nbreasts)<br \/>\n2 garlic cloves, minced<br \/>\n2 (4.5-ounce) cans diced green chiles, undrained<br \/>\n1 (14.5-ounce) can petite diced tomatoes, undrained<br \/>\n2 cups 2% reduced-fat milk<br \/>\n2 tablespoons all-purpose flour<br \/>\n1\/4 teaspoon salt<br \/>\n6 (8-inch) fat-free flour tortillas<br \/>\n2 cups (8 ounces) shredded Swiss cheese, divided<\/p>\n<p>Preheat oven to 350F.<\/p>\n<p>Heat a large nonstick skillet over medium-high heat. Coat pan with<br \/>\ncooking spray. Add onion; cook 5 minutes or until tender, stirring<br \/>\noccasionally. Stir in chicken, garlic, chiles, and tomatoes. Reduce<br \/>\nheat, and simmer 7 minutes or until liquid evaporates. Set aside.<\/p>\n<p>Combine milk and flour in a small saucepan over medium-high heat; cook 5<br \/>\nminutes or until mixture thickens, stirring constantly with a whisk.<br \/>\nStir in salt.<\/p>\n<p>Warm tortillas according to package directions. Spoon about 1\/2 cup<br \/>\nchicken mixture and about 2 1\/2 tablespoons cheese down center of each<br \/>\ntortilla; roll up. Arrange filled tortillas in the bottom of a 13 x<br \/>\n9-inch baking dish coated with cooking spray. Pour milk mixture over<br \/>\ntortillas, and top evenly with remaining 1 cup cheese. Bake at 350F for<br \/>\n25 minutes or until cheese is bubbly. Remove from oven.<\/p>\n<p>Preheat broiler.<\/p>\n<p>Broil casserole for 3 minutes or until cheese begins to brown.
