{"id":1994,"date":"2012-09-20T20:29:32","date_gmt":"2012-09-20T20:29:32","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1994"},"modified":"2019-05-10T16:54:24","modified_gmt":"2019-05-10T23:54:24","slug":"roast-beef-with-peppers-onions-and-potato","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/roast-beef-with-peppers-onions-and-potato\/","title":{"rendered":"Roast Beef with Peppers, Onions and Potato"},"content":{"rendered":"<p>Ingredients<\/p>\n<p>2 LB Beef roast (eye or the round is best for this recipe)<br \/>\n4 garlic cloves<br \/>\nEVOO<br \/>\nCoat with Dry Rub, wrap and refrigerate<\/p>\n<p>VEGGIES<br \/>\n1 Red onion (trim into large pieces)<br \/>\n1 yellow bell (large pieces)<br \/>\n1 red bell (large pieces)<br \/>\n1 potato (medium pieces)<\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/09\/roast-2016.png\" rel=\"attachment wp-att-6875\"><img decoding=\"async\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/09\/roast-2016.png\" alt=\"roast-2016\" width=\"281\" height=\"300\" class=\"alignright size-medium aiif6875\" \/><\/a>Season\/coat with <a href=\"https:\/\/www.grandpacooks.com\/recipes\/roberts-thunder-powder\/\">Grandpa&#8217;s Thunder Powder<\/a> or <a href=\"https:\/\/www.grandpacooks.com\/recipes\/grandpas-dry-rub\/\">Grandpa&#8217;s Dry Rub<\/a> depending on how spicy you want your coating.<\/p>\n<p>Instructions<\/p>\n<p>The night before, lightly oil your meat with EVOO, then coat your meat with the dry rub and wrap it in plastic.<br \/>\nRefrigerate overnight.<br \/>\nThe next day, let it warm just a bit (an hour on the counter) before cooking.<\/p>\n<p>1. Poke holes in meat with point of a sharp knife<br \/>\n2. Insert cloves of garlic into holes<br \/>\n3. Sprinkle with salt and pepper and thyme<br \/>\n4. Sear over very high heat using canola oil (about 400-450\u00ba)<br \/>\n5. Toss veggies in 1 TBL EVOO and spices of your choice<br \/>\n6. Spread veggies out on baking sheet<br \/>\n7. Place meat in center of baking sheet on top of veggies &#8211; fat cap on top if there is one<br \/>\n8. Bake all at 220-250\u00ba degrees for 2 hours<br \/>\n &#8211; Internal temperature should be about 115\u00ba<br \/>\n9. Close door and monitor internal temperature.  Take out when internal temp is 130\u00ba<\/p>\n<p>Let rest at room temperature for 5-10 minutes before carving.
