{"id":1979,"date":"2012-09-20T20:21:06","date_gmt":"2012-09-20T20:21:06","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1979"},"modified":"2025-12-31T12:32:01","modified_gmt":"2025-12-31T19:32:01","slug":"rcl-sourdough-rolls","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/rcl-sourdough-rolls\/","title":{"rendered":"RCL &#8211; Sourdough Rolls"},"content":{"rendered":"\n<p>SERVED ABOARD ROYAL CARIBBEAN &#8211; This recipe came from one of the chefs.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3 C High Gluten Flour<\/li>\n<li>1\/4 C Sour Dough Base<\/li>\n<li>2 tsp Yeast<\/li>\n<li>1.5 C Water &#8211; more or less &#8211; adjust database<\/li>\n<\/ul>\n<p><strong>Instructions as modified by Grandpa<\/strong><\/p>\n<ol>\n<li>Mix all ingredients for 5 minutes slow, and 4 minutes medium-fast until well developed<\/li>\n<li>Scale the dough into 3 LB batches<\/li>\n<li>Divide into rolls and place on the sheet pan<\/li>\n<li>Proof for 30 minutes<\/li>\n<li>Make a shallow cut on the top of each<\/li>\n<li>Bake with steam for 5 minutes at 500 degrees<\/li>\n<li>Then lower the temp to 400 and cook until browned<\/li>\n<\/ol>\n<p><strong>Original Recipe to serve to approximately 200 people<\/strong><\/p>\n<ul>\n<li>25 pounds High Gluten Flour, 99PRD011113<\/li>\n<li>2.5 LBS Sour Dough Base 10%, 99PRD011441<\/li>\n<li>5 oz Dry Yeast, 99PRD012140<\/li>\n<li>7.5 Liters Water<\/li>\n<li>Served on Days 1, 2, 3, 4, 5, 6, 7<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>SERVED ABOARD ROYAL CARIBBEAN &#8211; This recipe came from one of the chefs.
