2 C\u00b1 sifted<\/li>\n<li>2 oz shortening or lard<\/li>\n<li>buttermilk<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Use soft winter wheat<br \/>\nWork in the fat thoroughly<br \/>\nMix it quick, and don&#8217;t knead.<\/td>\n<td style=\"width: 50%;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>AP Flour &#8211; 340 gm (12 oz)<\/li>\n<li>1\/4 tsp Baking Soda<\/li>\n<li>20 gm (4 tsp) Baking Powder<\/li>\n<li>3\/4 tsp salt<\/li>\n<li>60 gm leaf lard (for flakiness)<\/li>\n<li>30 gm (1 oz) butter (browning)<\/li>\n<li>1 C lowfat buttermilk<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 100%;\" colspan=\"2\">Grandpa&#8217;s extras:&nbsp; 1\/2 tsp Granulated garlic, 1\/4 tsp ground chipotle chile, 1\/4 C sugar, 1\/4 C Masect &#8211; increase liquid by 1\/4 C<\/p>\n<ol>\n<li style=\"list-style-type: none;\">\n<ol>\n<li>Measure ingredients and set aside so they are ready<\/li>\n<li>Cut the fats into the flour mix<\/li>\n<li>Add liquid to create a wet sticky dough &#8211; Mix, don&#8217;t knead<\/li>\n<li>Mix initially with a spoon, then switch to a wide rubber spatula and fold together<\/li>\n<li>On a floured surface, form gently into a flattened square ball, then fold over and over about 8 times<\/li>\n<li>Pat flat, don&#8217;t roll flat, then cut with biscuit cutter.&nbsp; Push down and all the way through without twisting.&nbsp; After through, twist to remove<\/li>\n<li>After cutting, biscuits can be frozen and baked without thawing<\/li>\n<li>Rub steel baking sheet with Crisco<\/li>\n<li>Put onto sheet with sides just barely touching<\/li>\n<li>Put a small indent in the center of each one.&nbsp; This will help them rise evenly<\/li>\n<li>Alton cooks at 450\u00ba &#8211; Ma Mae cooks at 475\u00ba<\/li>\n<li>Bake 10 minutes; rotate; then cook another 10 minutes<\/li>\n<li>Leftover biscuits, split open and put in toaster oven<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n","protected":false},"excerpt":{"rendered":"<p>Ma Mae taught Alton how to make biscuits.&nbsp;
