{"id":1900,"date":"2012-09-17T21:13:18","date_gmt":"2012-09-17T21:13:18","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1900"},"modified":"2020-05-11T08:26:34","modified_gmt":"2020-05-11T15:26:34","slug":"how-to-can-tomatoes","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/how-to-can-tomatoes\/","title":{"rendered":"How to Can Tomatoes"},"content":{"rendered":"<p><strong>A NOTE ABOUT THESE INSTRUCTIONS<\/strong><\/p>\n<p><a href=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/09\/canning-jars.jpg\"><img decoding=\"async\" class=\"alignright size-medium aiif11377\" src=\"https:\/\/www.grandpacooks.com\/recipes\/wp-content\/uploads\/2012\/09\/canning-jars.jpg\" alt=\"canning-jars\" width=\"300\" height=\"179\" \/><\/a>These step by step instructions are USDA approved.\u00a0 It is very important to read up on canning before getting started, so that you don&#8217;t accidentally miss a small but very critical step.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>Lots of firm, ripe tomatoes from your garden or from the farmers market.<\/li>\n<li>12 Canning jars, lids, and screw rings &#8211; 16 oz &#8211; 1 pint<\/li>\n<li>A BIG pot of water &#8211; Fill with enough water to just barely cover the top of your canning jar.<\/li>\n<li>A medium pot of boiling water<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Time the entire wash cycle of your dishwasher WITH the dry cycle.<\/li>\n<li>Your tomatoes should be firm, red and ripe and have no soft spots.<\/li>\n<li>Wash your canning jars in the dishwasher making sure they finish the rinse and dry cycles.<br \/>\nThe rinse cycle will rinse off most bacteria, and the heat of the drying cycle will kill any remaining bacteria.<\/li>\n<li>Start your big pot to a boil on medium high heat<\/li>\n<li>Make a small X on the tip of the tomato<\/li>\n<li>Plunge them in boiling water in the medium pot for 60 seconds, then into cold water for another 60 seconds,<br \/>\nThe skin should easily peel off<\/li>\n<li>Discard the peels, and quarter your tomatoes and discard the hard stem end<\/li>\n<li>Using a slotted strainer or a spider strainer or a strainer basket, lower your tomatoes into the medium pot with boiling water<\/li>\n<li>Let them heat for 30-60 seconds<\/li>\n<li>Pack the fruit directly into the canning jar, leaving 1\/2 inch clear space at the top.<\/li>\n<li>Add 1 TBL lemon juice to the tomatoes<\/li>\n<li>Add a bit of your boiling water to cover the tomatoes<\/li>\n<li>Wipe jar rim with a damp cloth, and secure tops with the metal rings.<\/li>\n<li>Add your jars to your BIG pot of water.<\/li>\n<li>When the last jar is in place, verify that your water level has risen to about two inches above the tops of the containers.<br \/>\nAdd more water if you need to raise the water level.<\/li>\n<li>Increase heat to bring your big pot to a boil<br \/>\nReduce heat to a simmer, cover and start timing<\/li>\n<li>Let your pint canning jars simmer for 35 minutes.<br \/>\nIf you are using the larger quart jars, let them simmer for 45 minutes<\/li>\n<li>If water level starts to drop substantially, heat water to boiling in the microwave, and add to the pot to raise the water level.<\/li>\n<li>Remove jars right on time and place on a cooling rack.\u00a0 DO NOT TIP THE JAR.<\/li>\n<li>Let cook and store in a cool dark place until they are ready for use.<\/li>\n<li>Store opened cans in the refrigerator for up to a week.<\/li>\n<li>DISCARD a can if the lid seal seems to have broken, or if the lid is puffed up.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A NOTE ABOUT THESE INSTRUCTIONS These step by step instructions are USDA approved.\u00a0 It is very important to read up on canning before getting started, so that you don&#8217;t accidentally miss a small but very critical step.
