J<br \/>\n2 tablespoons minced scallions<br \/>\n1 tablespoon chopped cilantro<br \/>\n1 teaspoon salt I 0&#8242; L<br \/>\n3 tablespoons canola oil &#8211; c..t+IL.<br \/>\n1 pound skinless chicken breast halves, boned<br \/>\nd ,~<br \/>\nan deJatted<br \/>\nAvocado Salad: &#8220;&#8221;i<br \/>\ni ii<br \/>\n112 cup diced avocado\/ i\u2022\u2022<br \/>\n1\/3 cup diced tomato,\u2022<br \/>\n1 tablespoon diced red onion<br \/>\n2 teaspoons chopped cilantro<br \/>\n2 teaspoons lime juice<br \/>\n1\/4 teaspoon salt<br \/>\n112 teaspoon minced jalapeno<br \/>\n1 yellow bell pepper, thinly sliced<br \/>\n1 red bell pepper, thinly sliced<br \/>\n112 red onion, thinly sliced<br \/>\n1 teaspoon canola oil<br \/>\n4 whole-wheat tortillas, about 1 O-inches in diameter<br \/>\n1 cup shredded Monterey Jack cheese<br \/>\nFL..A-&#8216;.-&#8216;-\u00a31f<br \/>\n. () M I &#8221; ~ 6-r-&#8221;<br \/>\n1. In shallow glass baking pan, combine all ingredients for marinate and mix well. Add<br \/>\nchicken and marinate 2 hours or overnigbt.<br \/>\n2. Combine all ingredients for avocado salad in a small bowl. Mix well and refrigerate.<br \/>\n3. Preheat oven to 400\u221e. In a large saute pan, saute peppers and onions in cano1a oil over<br \/>\nmedium heat until tender, about 1 to 2 minutes. Remove from pan and add chicken breasts.<br \/>\nSear 1 to 2 minutes on each side or until golden brown. Transfer to baking pan and bake in<br \/>\noven for 10 minutes. Slice into 1-inch slices.<br \/>\n4. Place tortilla on a flat surface and place 3 ounces chicken on 112 of tortilla. Top with 112<br \/>\ncup sauteed vegetables and 114 cup shredded cheese. Fold half. Place on bot grill pan or<br \/>\nunder broiler to warm. Cut into 4 wedges.
