{"id":18674,"date":"2019-08-11T15:59:48","date_gmt":"2019-08-11T22:59:48","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=18674"},"modified":"2021-02-16T09:59:07","modified_gmt":"2021-02-16T16:59:07","slug":"quick-pickle","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/quick-pickle\/","title":{"rendered":"Quick Pickle"},"content":{"rendered":"<p>While these are not the BEST pickles you&#8217;ll ever make, they are perfectly serviceable and reasonably tasty.<\/p>\n<p>Toss two cucumbers in salt and sugar mixture<\/p>\n<ul>\n<li>2 sliced Kirby cucumbers &#8211; Crinkle cut if you have it<\/li>\n<li>1 tsp each :: Dill, Salt<\/li>\n<li>1\/4 C sugar<\/li>\n<\/ul>\n<p>Heat in a small pot and simmer 30 minutes:<\/p>\n<ul>\n<li>1 C Water<\/li>\n<li>1 C Apple Cider Vinegar<\/li>\n<li>1 C rice wine vinegar<\/li>\n<li>1 C Brown Sugar<\/li>\n<li>1\/2 Onion &#8211; sliced in 1\/4 inch pieces, then halved<\/li>\n<li>1 bay leaf<\/li>\n<li>6 Whole peppercorns<\/li>\n<li>2 whole garlic cloves<\/li>\n<li>1\/2 tsp each :: Red chile flakes, Celery seed, mustard seed<\/li>\n<\/ul>\n<ol>\n<li>Heat everything except cucumber mixture to near boil<\/li>\n<li>Simmer 30 minutes<\/li>\n<li>Rinse cucumber slices, and put into a clean bell jar<\/li>\n<li>Pour liquid into clean bell jars while still hot<\/li>\n<li>Put into an ice bath for 30 minutes<\/li>\n<li>Refrigerate overnight before serving<\/li>\n<li>This will keep for 2-3 months.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>While these are not the BEST pickles you&#8217;ll ever make, they are perfectly serviceable and reasonably tasty.
