In a medium saute pan, saute slf~llots in olive oil over medium heat until translucent. \nAdd remaining ingredients for sauce and saute 5 more minutes. Set aside.\n 3. Lightly coat a large saute pan with canola oil. Place over medium heat.\n4. In a medium bowl, beat eggs with salt and pepper. Spread Parmesan cheese on a large \nplate. Dip mahi in egg wash and dredge in Parmesan cheese. Gently place fish in hot \npan and cook over medium heat until golden brown, about 2 minutes on eacb side. \nTransfer to a baking pan and bake for 10 minutes or until fish is cooked through.\n5. In a large saute pan, heat olive oil over medium heat. Saute onions until translucent. \nAdd mustard greens and cook until wilted, about 1 to 2 minutes.\n6.
