{"id":18571,"date":"2019-07-28T17:43:19","date_gmt":"2019-07-29T00:43:19","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=18571"},"modified":"2019-07-28T17:43:19","modified_gmt":"2019-07-29T00:43:19","slug":"pease-porridge","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/pease-porridge\/","title":{"rendered":"Pease Porridge"},"content":{"rendered":"<p><a href=\"https:\/\/en.wikipedia.org\/wiki\/Pease_pudding\">Read about it here<\/a>.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1\/2 pound whole dried peas (split dried green peas may be substituted)<\/li>\n<li>5 ounces slab bacon, cut in 1\/2-inch cubes<\/li>\n<li>1 medium-size carrot, scraped and diced<\/li>\n<li>1 medium-size onion, peeled and chopped<\/li>\n<li>1 small white turnip, peeled and diced<\/li>\n<li>1 tsp dried sage<\/li>\n<li>1 tsp butter<\/li>\n<li>1 tsp oil<\/li>\n<li>Salt and freshly ground black pepper to taste<\/li>\n<li>1\/4 cup light cream or half-and-half, optional<\/li>\n<li>Minced fresh mint or savory for garnish<\/li>\n<\/ul>\n<p>Step by Step<\/p>\n<ol>\n<li>Rinse peas under running water<\/li>\n<li>Place peas in a bowl and cover with water to a depth of 2 inches above the peas and remove any stones or debris.\u00a0 Remove &#8220;floaters&#8221; as well.<\/li>\n<li>Set aside to steep six hours or overnight.<\/li>\n<li>Drain peas and place in a soup kettle.<\/li>\n<li>Add bacon, carrots, onions and turnips and stir to mix well.<\/li>\n<li>Cover with water to a depth of 1 inch above the mixture.<\/li>\n<li>Add sage.<\/li>\n<li>Place over medium-low heat and bring to a boil.<\/li>\n<li>Reduce heat until soup is barely simmering, cover and simmer 2 to 3 hours or until peas lose their shape and start to become creamy.<\/li>\n<li>Add a little boiling water from time to time if necessary.<br \/>\nYou should have a thick soup, but not what we think of today as porridge.<\/li>\n<li>When soup is done, remove bacon chunks.<\/li>\n<li>Saute bacon in butter until brown on all sides.<\/li>\n<li>Add salt and pepper.<\/li>\n<li>Soup may be put through a sieve and 2-3 tsp butter may be added if desired to make it a bit richer.<\/li>\n<li>Serve garnished with the fried bacon chunks, sippets (triangles of thin crustless bread lightly fried in butter or bacon fat) and a little minced mint.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Read about it here.
