{"id":18536,"date":"2019-07-23T15:03:07","date_gmt":"2019-07-23T22:03:07","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=18536"},"modified":"2019-08-06T10:29:09","modified_gmt":"2019-08-06T17:29:09","slug":"tweaking-a-cookie-recipe","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/tweaking-a-cookie-recipe\/","title":{"rendered":"Tweaking a Cookie Recipe"},"content":{"rendered":"<p>Thanks to Alton Brown for providing most of the chemistry for this page.<\/p>\n<h2>Basic Crispy Cookie<\/h2>\n<ul>\n<li>2 sticks butter<\/li>\n<li>1 C white granulated sugar<\/li>\n<li>1\/2 C brown sugar<br \/>\n1.\u00a0\u00a0 Cream together above ingredients<br \/>\n2.\u00a0 Decide if you want FLAT or PUFFY cookies<\/li>\n<li>For flat: Add 1 egg, 2 oz milk and 1.5 tsp vanilla<\/li>\n<li>For puffy: Add 2 eggs and 1.5 tsp vanilla<br \/>\n3.\u00a0 Preheat oven to 375\u00ba<br \/>\n4.\u00a0 Beat until smooth<\/li>\n<li>In separate bowl, combine 2 \/14 C AP flour, 1 tsp salt and 1 tsp baking soda<\/li>\n<li>Optionally, add 1 &#8211; 2 C chocolate chips to the dry ingredients<\/li>\n<li>Add dry ingredients to the wet and fold together, but do not overmix<\/li>\n<li>Put onto parchment paper, leaving room for them to spread (wax melts)<br \/>\n5.\u00a0 Bake 5 minutes, then rotate pan<br \/>\n6.\u00a0 Bake another 6-10 minutes<\/li>\n<\/ul>\n<h2>Puffy Cookies<\/h2>\n<ul>\n<li>1 C shortening\u00a0 (This replaces the butter that was used above)<\/li>\n<li>3\/4 C white granulated sugar<\/li>\n<li>1 C brown sugar (More brown sugar means more molasses in the dough)<br \/>\n1.\u00a0\u00a0 Cream together above ingredients<br \/>\n2.\u00a0 Add 2 eggs and 1.5 tsp vanilla<br \/>\n3.\u00a0 Preheat oven to 350\u00ba (lower temp = longer cook time)<br \/>\n4.\u00a0 Beat until smooth<\/li>\n<li>In separate bowl, combine 2 \/14 C cake flour, 1 tsp salt and 1.5 tsp baking powder (cake flour is finer than AP flour, plus baking powder will promote a rise during baking &#8211; baking soda only provides a chemical rise)<\/li>\n<li>Optionally, add 1 &#8211; 2 C chocolate chips to the dry ingredients<\/li>\n<li>Add dry ingredients to the wet and fold together, but do not overmix<\/li>\n<li>COOL in the fridge for 30 minutes<\/li>\n<li>Put onto parchment paper, leaving room for them to spread (wax melts)<br \/>\n5.\u00a0 Bake 5 minutes, then rotate pan<br \/>\n6.\u00a0 Bake another 6-10 minutes<\/li>\n<\/ul>\n<h2>Chewy Cookies<\/h2>\n<ul>\n<li>2 sticks butter<\/li>\n<li>1\/4 C white granulated sugar<\/li>\n<li>1.25 C brown sugar<br \/>\n1.\u00a0\u00a0 Cream together above ingredients<br \/>\n2.\u00a0 Add 1 egg plus 1 egg yolk, 2 TBL milk and 1.5 tsp vanilla<br \/>\n3.\u00a0 Preheat oven to 350\u00ba<br \/>\n4.\u00a0 Beat until smooth<\/li>\n<li>In separate bowl, combine 2 \/14 C bread flour, 1 tsp salt and 1 tsp baking soda (bread flour will increase the gluten, giving a more cohesive dough)<\/li>\n<li>Optionally, add 1 &#8211; 2 C chocolate chips to the dry ingredients<\/li>\n<li>Add dry ingredients to the wet and fold together.<\/li>\n<li>Chill for 30 minutes in the fridge<\/li>\n<li>Put onto parchment paper, leaving room for them to spread (wax melts)<br \/>\n5.\u00a0 Bake 5 minutes, then rotate pan<br \/>\n6.\u00a0 Bake another 6-10 minutes<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Thanks to Alton Brown for providing most of the chemistry for this page.
