{"id":18502,"date":"2019-07-16T16:56:20","date_gmt":"2019-07-16T23:56:20","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=18502"},"modified":"2019-07-16T17:05:01","modified_gmt":"2019-07-17T00:05:01","slug":"elote-corn","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/elote-corn\/","title":{"rendered":"Elote Corn"},"content":{"rendered":"<p>A version of this recipe was shown by Jeff Smedstad on YourFamily A-Z.\u00a0 A few adaptations were made for my recipe.\u00a0 <a href=\"https:\/\/www.azfamily.com\/shows\/your_life_arizona\/recipes\/elote-recipe-from-elote-cafe\/article_c4156eda-9c46-11e9-9403-1fd2ac5458be.html\">Click here<\/a> for the original recipe.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>2-3 ears of corn on the cob with the husk still on<\/li>\n<li>3 TBL crumbled Cotija cheese<\/li>\n<li>1 TBL fresh chopped cilantro<\/li>\n<li>2 TBL diced red onion<\/li>\n<li>1 TBL chopped chives<\/li>\n<li>\u00a0SAUCE\n<ul>\n<li>2 TBL mayonnaise<\/li>\n<li>2 TBL sour cream<\/li>\n<li>1 TBL butter<\/li>\n<li>1 tsp <a href=\"https:\/\/www.grandpacooks.com\/recipes\/jalapeno-chili-sauce\/\">Grandpa&#8217;s Jalape\u00f1o Chili Sauce<\/a> or Choloula<\/li>\n<li>1 tsp sugar<\/li>\n<li>1\/4 tsp each salt and black pepper<\/li>\n<li>2 TBL chicken stock<\/li>\n<li>Juice and zest from one lime<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ol>\n<li>Cut off both ends of the corn, then strip off husk until you can see corn kernels through the remaining husk, but leaving at least one layer of husk to protect the corn &#8211; grill or broil till starts to char getting color on all sides<\/li>\n<li>Strip off the husk, and set aside to cool while you prepare the other ingredients<\/li>\n<li>Heat all sauce ingredients over medium heat just until steam starts to rise from the liquid.<\/li>\n<li>Meanwhile, cut corn kernels from the cob<\/li>\n<li>Mix corn and sauce<\/li>\n<li>Serve with chips or as a side to your meat dish<\/li>\n<li>Top with cilantro and crumbled Cotija and <a href=\"https:\/\/www.grandpacooks.com\/recipes\/roberts-thunder-powder\/\">Thunder Powder<\/a><\/li>\n<li>Optional: serve a bit of <a href=\"https:\/\/www.grandpacooks.com\/recipes\/pickled-onion\/\">pickled onion<\/a> on the side<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A version of this recipe was shown by Jeff Smedstad on YourFamily A-Z.\u00a0 A few adaptations were made for my recipe.\u00a0 Click here for the original recipe.
