about 180 gm)<\/li>\n<li>4 eggs plus two whites<\/li>\n<\/ul>\n<p>See also <a href=\"https:\/\/www.grandpacooks.com\/recipes\/pate-a-choux-croquembouche\/\">Pate a Choux<\/a> or Croquembouche<\/p>\n<ol>\n<li>Combine 1 stick butter, 3\/4 C water and 2 TBL sugar<\/li>\n<li>Bring up to a boil<\/li>\n<li>Reduce heat to low, and stir in 3\/4 C Bread flour all at once, while still hot, and stir quickly to combine<\/li>\n<li>Cook until the dough partly cooks &#8211; about 3-5 minutes<\/li>\n<li>Let cool until it is just warm, not hot\n<ul>\n<li>NOTE:&nbsp; It freezes well at this point<\/li>\n<\/ul>\n<\/li>\n<li>Put the mixture into a Kitchen Aid and add 3 whole eggs, one at a time letting each one completely incorporate<\/li>\n<li>Use an ice cream scoop to place balls (or pipes) on a baking pan lined with parchment\n<ul>\n<li>Pipe into a pile, or forth and back to make an even pipe<\/li>\n<\/ul>\n<\/li>\n<li>Bake at 425\u00ba for 10 minutes<\/li>\n<li>Lower heat to 350 for 10 more minutes<\/li>\n<li>Cool and vent (by poking a hole in the top or sides)<\/li>\n<li>Fill by piping in pastry cream (see below)<\/li>\n<\/ol>\n<p>Authentic Pastry Cream<\/p>\n<ul>\n<li>3\/4 C whipping cream<\/li>\n<li>8 oz marscapone<\/li>\n<li>2 TBL powdered sugar (100 gm)<\/li>\n<li>OPT: Fold in 1\/2 C raspberry jam<\/li>\n<\/ul>\n<p>Cooked Pastry Cream<\/p>\n<ul>\n<li>1 large eggs plus 1 yolk<\/li>\n<li>50 gm granulated sugar<\/li>\n<li>1 C whole milk<\/li>\n<li>15-20 gm butter<\/li>\n<li>15 gm cornstarch<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<li>only a pinch of salt<\/li>\n<\/ul>\n<ol>\n<li>Combine sugar, eggs into a glass bowl<\/li>\n<li>Sift corn starch in, then set aside<\/li>\n<li>Bring milk and other ingredients to a simmer<\/li>\n<li>Temper into your egg mixture (about a quarter of it)<\/li>\n<li>Put eggs back into the milk, and return to heat<\/li>\n<li>Heat, but DO NOT simmer<\/li>\n<li>Will thicken quickly<\/li>\n<li>Strain and cool<\/li>\n<li>Pipe into your puff<\/li>\n<\/ol>\n<p>Chocolate Topping<\/p>\n<ol>\n<li>230 gm chopped chocolate<\/li>\n<li>170 gm heavy cream<\/li>\n<li>5 tsp coffee<\/li>\n<li>1 pinch salt<\/li>\n<li>1 TBL corn syrup\n<ul>\n<li>Heat over a double boiler<\/li>\n<\/ul>\n<\/li>\n<li>Let cool to 90 degrees before putting on puff<\/li>\n<li>Chill briefly<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1 stick butter 3\/4 C water just a pinch of salt 2 TBL sugar bring up to a boil 3\/4 C Bread flour (about 6 oz flour &#8211;
