If you do it inside, you will set off the smoke alarms.<\/p>\n<h2>Day before you eat<\/h2>\n<ol>\n<li>Cut high-grade tri tip into 2 inch slabs<\/li>\n<li>Prepare dry rub and put into a bag\n<ul>\n<li>3 T garlic<\/li>\n<li>2 T lemon pepper<\/li>\n<li>2 T alspice<\/li>\n<li>2 T salt<\/li>\n<li>1 T dried basil<\/li>\n<li>2 T brown sugar<\/li>\n<li>1\/4 C Grandpa&#8217;s Thunder Powder<\/li>\n<\/ul>\n<\/li>\n<li>Put pieces of meat into the bag<\/li>\n<li>Toss meat in dry Rub and put onto a plate<\/li>\n<li>Refrigerate everything at least overnight<\/li>\n<li>Put 1-2 C of wood chips into water to soak overnight<\/li>\n<\/ol>\n<h2>The day of cooking<\/h2>\n<ol>\n<li>&nbsp;Lightly oil a cast iron skillet that has a fairly tight fitting lid.&nbsp; You will also want a wire rack that fits inside the skillet.&nbsp; If you don&#8217;t have a lid,&nbsp; you can use heavy-duty aluminum foil as a covering.<\/li>\n<li>Put wood chips into a strainer.&nbsp; You want them damp or water-logged, but not in standing water.<\/li>\n<li>Heat cast iron skillet to 525-550\u00ba on a free-standing hot-plate or burner.&nbsp; Use a very sturdy table&#8230; this can be dangerous if your burner gets bumped onto the patio.<\/li>\n<li>Dump (drained) wood chips into skillet and the put a rack over the chips<\/li>\n<li>Put your meat on the rack and then cover the pan.<\/li>\n<li>Turn the heat down to medium-high and cook covered for 30-60 minutes.&nbsp; Make sure internal temp of meat is at least 120\u00ba<\/li>\n<\/ol>\n<p><strong>Meanwhile, you can cook your BBQ Sauce<\/strong><\/p>\n<ul>\n<li>1\/4 C apple cider vinegar<\/li>\n<li>1\/4 C water<\/li>\n<li>1\/2 C ketchup<\/li>\n<li>1\/2 C brown sugar<\/li>\n<li>2 TBL Grandpa&#8217;s Thunder Powder<\/li>\n<li>1 TBL prepared horseradish<\/li>\n<li>2 TBL grated onion<\/li>\n<li>2 cloves fresh grated garlic<\/li>\n<li>1\/4 C soy sauce<\/li>\n<li>1\/4 C Worchestershire<\/li>\n<li>1\/2 C orange juice<\/li>\n<li>2 T Dijon mustard<\/li>\n<li>2 T (optional) hickory smoke<\/li>\n<li>Bring up to a simmer and let cook 10 minutes<\/li>\n<li>Cover and turn off heat<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This has to be done outside.
