Whisk together<\/li>\n<li>2 1\/2 C AP flour<\/li>\n<li>1 tsp salt<br \/>\n&#8211; Pulse dry ingredients<\/li>\n<li>2 sticks cold butter &#8211; cut into tabs<br \/>\n&#8211; Pulse to pea size with dry ingredients<br \/>\n&#8211; Fold wet and dry together<\/li>\n<li>DO NOT overmix<br \/>\n&#8211; Wrap in plastic<br \/>\n&#8211; Refrigerate 10 hours<\/li>\n<\/ul>\n<ol>\n<li>Dust counter with flour &#8211; use sugar shaker<br \/>\nDust both sides<\/li>\n<li>Flatten and roll<\/li>\n<li>Fold (tame) into a square<\/li>\n<li>Dust and flatten<\/li>\n<li>Fold into thirds<\/li>\n<li>Roll from center &#8211; outward<\/li>\n<li>Keep square shape<\/li>\n<li>Fold into thirds again<\/li>\n<li>Cut in half<\/li>\n<li>Wrap both halves (separately) in plastic<\/li>\n<li>Refrigerate 1-20 hours<br \/>\n<strong>The next day<\/strong><\/li>\n<li>Dust surface with flour<\/li>\n<li>Roll into 10&#215;20 square on floured surface<\/li>\n<li>Cut into 5 inch squares<\/li>\n<\/ol>\n<h2>Filling<\/h2>\n<ul>\n<li>Fill with 1 rounded tsp of filling<\/li>\n<li>Add 1 tsp pastry cream<br \/>\n&#8211; Paint edges with egg wash<br \/>\n(1 egg and 1 tsp water)<\/li>\n<li>Fold (see Folding Techniques)<\/li>\n<\/ul>\n<h3>Apricot Filling<\/h3>\n<ul>\n<li>1 C sugar<\/li>\n<li>1 C apricots<\/li>\n<li>1\/2 C water<\/li>\n<\/ul>\n<h3>Prune Filling<\/h3>\n<ul>\n<li>1 C sugar<\/li>\n<li>1 C prunes<\/li>\n<li>1\/2 C water<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<\/ul>\n<h3>Alternative Filling<\/h3>\n<ul>\n<li>Raspberries<\/li>\n<li>Blueberries<\/li>\n<li>Blackberries<\/li>\n<li>Strawberries<\/li>\n<li>Lingonberries<\/li>\n<li>Cranberries<\/li>\n<\/ul>\n<h3>Confectioner Cream<\/h3>\n<ul>\n<li>1 C heavy cream or Half and Half<\/li>\n<li>1 1\/2 TBL cornstarch<\/li>\n<li>2 TBL granulated sugar<\/li>\n<\/ul>\n<ol>\n<li>Microwave 1 minute, then stir<\/li>\n<li>Microwave another minute, then stir<\/li>\n<li>Switch to microwave time of 30 seconds, then stir<\/li>\n<li>Repeat about four more times until quite thick<\/li>\n<li>Temper in 1 egg yolk mixed with 1 tsp vanilla<\/li>\n<li>Once tempered, mix all together<\/li>\n<li>Chill 30 minutes before using<\/li>\n<\/ol>\n<h2>Filling Preparation<\/h2>\n<ul>\n<li>Chop desired filling in food processor to chop, not quite to puree<\/li>\n<li>Mix with 2 TBL lemon<\/li>\n<li>Optional: 1\/2 tsp almond extract<\/li>\n<li>You can jar and refrigerate<\/li>\n<\/ul>\n<h3>Microwave<\/h3>\n<p>Microwave for 10 minutes, stirring every 60 seconds<\/p>\n<h3>Stovetop<\/h3>\n<p>Bring to a simmer and cook 5 minutes, stirring continually<\/p>\n<h2>Folding Techniques<\/h2>\n<h3>Packet<\/h3>\n<ol>\n<li>Put filling in center<\/li>\n<li>Pick up all four corners<\/li>\n<li>Bring to the center over top of the pastry<\/li>\n<li>Pinch together<\/li>\n<li>Twist to secure<\/li>\n<\/ol>\n<h3>Tre Hjorne<\/h3>\n<ol>\n<li>Put filling in center<\/li>\n<li>Fold opposite two corners together<br \/>\n&#8211; create a triangle (three corners)<\/li>\n<li>Put a little twist in the two pointed corners<\/li>\n<\/ol>\n<h3>Spandaur<\/h3>\n<ol>\n<li>Put filling in center<\/li>\n<li>Put opposite corners &#8211; one on top of the other<br \/>\n&#8211; this will create a kind of a roll<\/li>\n<li>Secure with egg wash<\/li>\n<li>Egg wash and decorate with scraps<\/li>\n<\/ol>\n<h3>Half Circle Fold<\/h3>\n<ol>\n<li>Cut the edges off the square, creating a circle<\/li>\n<li>Put filling in center<\/li>\n<li>Fold the circle into half<\/li>\n<li>Secure &#8211; paint edges with egg wash<\/li>\n<li>Use the leftover pieces to create a decoration<\/li>\n<li>Secure with egg wash<\/li>\n<\/ol>\n<h3>Star Fold<\/h3>\n<ol>\n<li>Put filling in center<\/li>\n<li>Slice from filling to each of the four points<br \/>\nYou will have an X with no cut under the filling<\/li>\n<li>Secure &#8211; paint edges with egg wash<\/li>\n<li>Fold over left sides, leaving the right sides pointed out<\/li>\n<\/ol>\n<h2>After Folded<\/h2>\n<ol>\n<li>Put parchment paper on a baking sheet<\/li>\n<li>Place folded pastries parchment paper<\/li>\n<li>Let rise 30 minutes<\/li>\n<li>Brush with egg whites<\/li>\n<li>Sprinkle with Pearl or Turbinado Sugar<\/li>\n<li>Bake 400\u00ba for 10 minutes<\/li>\n<\/ol>\n<h2>Icing<\/h2>\n<ul>\n<li>1\/2 C confectioner sugar<\/li>\n<li>2-3 tsp milk (start with 2)<\/li>\n<li>Put into sandwich bag and secure the open end<\/li>\n<li>Cut the merest tip from the bag<\/li>\n<li>Squeeze icing out &#8211;
