{"id":1784,"date":"2012-04-15T14:41:47","date_gmt":"2012-04-15T14:41:47","guid":{"rendered":"https:\/\/www.grandpacooks.com\/recipes\/?p=1784"},"modified":"2017-12-02T23:17:33","modified_gmt":"2017-12-03T06:17:33","slug":"spanish-fritatta","status":"publish","type":"post","link":"https:\/\/www.grandpacooks.com\/recipes\/spanish-fritatta\/","title":{"rendered":"Spanish European Frittata"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>1 medium to large red-skin potato, sliced thin<\/li>\n<li>6 large eggs<\/li>\n<li>3\/4 cup milk<\/li>\n<li>Extra-virgin olive oil<\/li>\n<li>1 medium onion, sliced into thin rings<\/li>\n<li>1 large garlic clove, minced<\/li>\n<li>1 cup fresh-grated Parmigiano-Reggiano, Asiago, or Fontinella cheese<\/li>\n<li>1 cup shredded Muenster or Monterey Jack cheese<\/li>\n<li>Salt and fresh-ground black pepper<\/li>\n<li>1 tablespoon mild paprika<\/li>\n<li>1\/8 teaspoon salt<\/li>\n<li>1\/8 teaspoon fresh-ground black pepper<\/li>\n<\/ul>\n<p><strong>STEP BY STEP<\/strong><\/p>\n<ul>\n<li>Preheat the oven to 350 F.<\/li>\n<li>Oil 10-inch skillet (with an ovenproof handle) lightly<\/li>\n<li>Heat over medium-high heat.<\/li>\n<li>Add the potatoes, onions, and a little salt and pepper.<\/li>\n<li>Saut\u00e9 until the potatoes are tender.<\/li>\n<li>Remove skillet from the heat.<\/li>\n<li>Stir in the garlic<\/li>\n<li>Sprinkle the potatoes with the paprika.<\/li>\n<li>In a bowl, beat together the eggs, milk, salt, pepper<\/li>\n<li>Add 2\/3 cup of each of the cheeses.<\/li>\n<li>Pour the mixture over the sauteed potatoes.<\/li>\n<li>Sprinkle with the remaining cheeses<\/li>\n<li>Cover with foil, and bake for 30 minutes<\/li>\n<li>Uncover and bake for 10 to 15 minutes more, or until a knife inserted in the center comes out fairly clean<\/li>\n<li>Let omelet stand for 5 to 10 minutes before cutting it into wedges.<\/li>\n<li>Serve warm<\/li>\n<\/ul>\n<p>If possible, use organic eggs.
